Rice Soup


This is a simple and delicious meal. Mostly enjoyed in the cold weather. It can be served as lunch or dinner. Cooked with lots of veggies. Feel free to add any other vegetables of your choice. This meal is also a low meal budget. Cooked with few and available ingredients that are mostly available at home. Video has been uploaded on my YouTube Channel. Ingredients:

1 cup rice (washed and strained)

1/2 cup carrots

1 large diced onion

1/2 cup chopped spring onions

1 tbsp grated ginger and garlic

1 tsp Asmie's Kitchen Ground Pepper

1 tsp Asmie's Kitchen Curry Powder

1 tsp Italian seasoning

2-3 stock cubes

6 cups of water (use measuring cup)

1/2 medium cooking spoon oil

   Method

Heat the oil in a medium pot. Add the diced carrots, onions and chopped spring onions. Stir fry for 5 minutes or till the onions are translucent. Add water enough to cook the rice. Season with the spices and seasoning. Cover the pot and allow to boil. Add the rice and stir. Cover the pot and allow to cook. Remember, it should be watery. Serve warm and enjoy!© Asmie's Kitchen
