Tofu (Awara) Vegetable Curry

Ingredients:

Pieces of raw tofu (Awara)  (cut into cubes)

1 cup blended red bell peppers, garlic,onions, spring onions, fresh curry and oregano leaves (use 250ml measurement cup)

1 handful of chopped ugu leaves 

3 tbsps ground crayfish 

2 stock cubes 

4 tbsps oil 

1 diced onion 

1/2 tsp Asmie's Kitchen Curry powder 

1/2 tsp Asmie's Kitchen Mixed Spices 

1/2 tsp Asmie's Kitchen Secret of Cooking Spice 

2 tbsps flour or corn flour 

Method 

Place a pot on fire and add the oil, blended red bell peppers, onions, garlic, spring onions, fresh curry and oregano leaves. Stir fry for 5 minutes.

 Season with stock cubes, Asmie's Kitchen Curry powder, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice and ground crayfish. Add the raw tofu and pour some water enough to cook the tofu. Stir, cover the pot and allow to cook. Make a slurry with the flour (add 5-6 tbsps of water to the flour and stir) Pour into the pot and stir. Cook for 3-5 minutes. This helps to thicken the soup. Though it's optional, it can be skipped.

Finally, add chopped ugu leaves and diced onions. Stir and cook for 5 minutes. Serve watery alone or with white rice and enjoy © Asmie's Kitchen
