Garri Fortor

This is a simple yet delicious Ghanaian Delicacy, known as garri Fortor. Whereby the garri is mashed or mixed with stew. Video has been uploaded on my YouTube Channel Asmie's Kitchen.  Ingredients:

2 cups Garri

Fried fish (deboned)

4 peeled carrots (cut into strips)

2 diced onions

2 cups shredded cabbage

4 cups blended tomatoes, onions, red bell peppers, ginger and garlic

1/2 tsp Asmie's Kitchen Mixed Spices

1/2 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp Asmie's Kitchen Jollof Rice to add taste and colour

3 stock cubes

Small potash or 1/4 tsp baking powder

1 cooking spoon oil

METHOD

Heat the oil in a medium pot, add the blended tomatoes onions red bell peppers,ginger, garlic, potash or baking powder in case the tomatoes are sour. Stir fry now and then till the oil appears on top of the stew. 

As you are trying the stew, get a medium bowl. Pour the garri, add half cup of water (use 125ml measuring cup) mix the garri with a spoon, to get rid of the lumps. The water will soften the garri. Don't add too much water. 

  Back to the stew. Add the fried fish, spices and stock cubes, stir fry for 5 minutes. Add the vegetables i.e cabbage, carrots and onions. Stir, reduce the flame to low and cook for 5 minutes. Add the garri and stir.  Remove from the fire. Or cook for few minutes on low flame, then remove from the fire.

  Serve and enjoy! Some served it with fried plantains, some with salad. ©Asmie's Kitchen

Tofu Vegetable Soup (2)

 This is a simple yet healthy soup cooked with blended raw Tofu (Danyen Awara) instead of egusi. It's delicious and can be served with swallow of your choice. Feel free to use meat, chicken, offals (kayan ciki) or fish. You can also use spinach instead of ugu leaves.

 INGREDIENTS:

10 pieces of raw Tofu (Awara) 

Fried Fish (deboned)

2 cups chopped ugu leaves

5 cups/ I small bowl (just like the size of the bowl in the picture) full of blended tomatoes, red bell peppers, onions, ginger, garlic, fresh curry leaves

1 cooking spoon oil

3 stock cubes

1 tsp salt

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp Onga Stew

1 tsp thyme

Little potash (kanwa) or baking powder

 METHOD

Use your big blender, and blend the tofu (Awara) without adding water. Pack from the blender and set aside.

Boil the blended tomatoes red bell peppers, onions, ginger, garlic, fresh curry leaves, thyme, with a little potash or baking powder in case the tomatoes are sour. 

 Add the oil and fry till the oil appears on top of the stew, add the fried fish, spices, stock cubes, salt and stir cook for 5 minutes. Add the blended raw Tofu and stir well. Cook for 5-7 minutes. 

 Reduce the flame to low. Add the chopped, washed Ugu leaves. Stir and cook for another 5 minutes. Your soup is ready! Serve with Eba or any swallow of your choice.©Asmie's Kitchen

DASHISHI with CHICKEN STEW

Dashishi is a northern traditional food made with Wheat (Alkama). It has nutritional value, especially for diabetic patients.

  Ingredients: 
5 cups Wheat
1 cup oil
Salt to taste
1 tsp grated, ground or powdered ginger
1 tsp Asmie's Kitchen Mixed Spices 
1/2 tsp Asmie's Kitchen Secret of Cooking Spice
2 cups washed and shredded cabbage
1 cup  peeled carrots (cut into strips)
1 cup diced onions
1/2 cup chopped spring onions


Method
Wash the wheat with water to remove all dirts. Spread under the sun or shade in a clean sack or tray till it dried. 
  Take it to the mill or use your small blender (used for blending groundsnuts, egusi, etc) to crush it just like burabisko (bisko). 
   Seive with a seive to remove the flour in the wheat. Wash and strain in a strainer. Pour some water in a steamer or steam pot. Place it's lid to cover the water. Cover and bring the water to boil.
  Spread a clean or washed sack in the steam pot (get a light sack not a heavy one) add the washed and strained wheat in the sack. Cover and steam for 20 minutes on medium flame. 
    Remove from the fire, pack the steamed wheat in a medium bowl. Add the oil and stir very well with a cooking spoon or wooden spoon. Season with salt and spices. Add the shredded cabbage, carrots, onions and spring onions. Mix all together. 
 Place the steam pot back onto the fire, allow the water inside to boil. If you need to add more, add some water water and bring to the boil. Open the steam pot and add the DASHISHI mixture into the sack that is inside the steam pot. Cover the steam pot and cook till you perceive the aroma of the wheat, or cook 10-20 minutes on medium flame. 
  Remove from the fire, pack the Dashishi and serve with Stew or Vegetable Soup and enjoy!©Asmie's Kitchen

Jamaican Banana Fritters

Ingredients:

1/2 cup sifted flour

4 medium bananas

3 tbsps sugar

1/4 tsp ground nutmeg

1/4 tsp ground cinnamon

1/2 cup water

1/2 cup oil for frying

  Method

Peel the bananas and put in a medium mixing bowl. Mash with a fork or a masher. Add the sifted flour, sugar, ground nutmeg, ground cinnamon and water. Mix all ingredients with a whisk or spoon. 

  Heat some oil in a pan, add tbsp of the mixture into the hot oil and fry till brown. Flip over and fry the other side till brown too. Repeat the process with the remaining mixture. Sprinkle some cinnamon sugar on top of the banana fritters and serve.© Asmie's Kitchen 

   CINNAMON SUGAR

Mix 1 tbsp sugar and 1/4 tsp cinnamon in a small bowl.

Ingredients:

1 cup rice flour

3 ripe bananas

1/2 cup soya milk

2 tsps baking powder

3 tbsps sugar

Pinch salt

2 tbsps Oil

 METHOD

How to make rice flour at home 👇

Pour white rice (used for making tuwon Shinkafa) in a small blender for blending (groundsnuts, egusi, etc) blend the rice till it becomes powder. Seive and set aside.

   Peel the bananas and put in a bowl. Use a masher or fork to mash the bananas. Set aside.

In a medium mixing bowl. Add the rice flour, gradually add the soya milk, stirring till free of lumps. Add the mashed bananas, sugar, pinch salt, oil and stir or whisk with a whisk. 

  Place a pan on fire, it should be on medium flame. Brush the pan with some oil. When hot, add 2 scoops of the rice pancakes. Flatten it with the back of the scoop. Fry for 2-3 minutes. Flip over and fry the other side for 2-3 minutes. Remove from the pan. 

   Repeat the process till you exhaust all the remaining batter. Serve alone or with honey or maple syrup and enjoy!© Asmie's Kitchen

Tofu (Awara) Vegetable Soup

A healthy and delicious soup. Tofu is used in place of egusi. It's a must try recipe. My family and I enjoyed it.

 Ingredients:

300 naira tofu (Awara) (flaked/crumbled)

5 cups blended tomatoes, onions, red bell peppers, ginger, garlic, fresh curry leaves & spring onions

1 medium bowl cooked meat, kpomo & stock fish

3 cups wash and chopped spinach

3-4 stock cubes

1 tbsp thyme

1/2 tsp baking powder/ potash

1 cup palm oil

3 cups stock (gotten from the cooked meat, stock fish and kpomo)

1/2 cup ground crayfish

Method

In a medium pot, pour the blended tomatoes, peppers, onions, ginger, garlic, fresh curry leaves and spring onions. Add some potash or baking powder in case the tomatoes are sour. Stir and boil till the liquid in the tomatoes is almost absorbed.

  Add the palm oil, cooked meat, stock fish, stock fish. Stir and cook for 10 minutes. Add the crumbled tofu (Awara), stock cubes, thyme, crayfish and stock. Stir and cook for another 10 minutes. Finally, add the chopped spinach, stir and cook on low flame for 5 minutes. Serve with eba, semovita, pounded yam, etc and enjoy!© Asmie's Kitchen

 Ingredients:

Fried coated fish (cut into large pieces)

1 cup shredded lettuce

2 cups shredded cabbage

1/2 cup chopped spring onions

1 thinly diced onion

1/2 cup chopped mint leaves

3 diced tomatoes

1/2 cucumber (cut into strips)

  Dressing:

2 tbsps oil

1 tbsp Apple vinegar or lemon juice

1/2 tsp salt

1/2 tsp ground black pepper

1/8 tsp chilli flakes

   Method

Add all the vegetables in a medium bowl. Add the fish and toss to combine. Drizzle the salad dressing and mix to combine. Serve alone or with food of your choice and enjoy! © Asmie's Kitchen

Vegetable Club Sandwich

 Ingredients:

6 Sliced bread

Golden penny Spread

2 lettuce leaves

1/2 sliced cucumber

1 cup shredded cabbage

1/2 cup peeled carrots (cut into strips)

1 diced onion

1/2 tsp ground black pepper

1/2 tsp salt

2 tbsps oil

  Method

Heat the oil in a pan. Add the vegetables, season with salt and ground black pepper till halfway cooked. Set aside.

  Spread the margarine on the 6 sliced bread. Place a lettuce leaf on top. Arrange 3 slices of cucumber. Cover with the second sliced bread. Add spoons of the stir fried vegetables on top of the bread. Cover with the third slice of bread.

  Repeat the process with the 3 sliced bread. Feel free to grill it if you want.

Serve warm with hot tea or Orange Juice and enjoy!© lAsmie's Kitchen

1 cup parboiled rice

Fried Fish (deboned)

1/4 cup crayfish

3 boiled eggs

1 cup blended red bell peppers, onions, ginger, garlic & fresh curry leaves

1/8 tsp crushed locust beans / iru (daddawa)

1/2 tsp Asmie's Kitchen Malaysian Curry Powder

1/2 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp Asmie's Kitchen Jollof Rice Spice

2 stock cubes

Few sprigs of fresh curry leaves/ basil leaves

1/2 cooking spoon oil

 Method

Heat some oil in a pan and fry the locust beans for a minute on low flame. Fry onions till translucent. Stir in blended red bell peppers, onions, ginger, garlic & fresh curry leaves. Fry for 5 minutes on medium flame. 

 Add fried fish, ground crayfish, fresh curry leaves, crushed stock cubes, spices and carrots. Stir and cook for 5 minutes. Stir in the parboiled rice, stir to combine. Cover the pot and cook for 5 minutes on low flame.©Asmie's Kitchen

  Ingredients:

1 cup chopped ugu leaves

3 cups blended tomatoes, red bell peppers, onions, ginger, garlic 

1 satchet of tomato paste

4 soft boiled eggs

1/8 tsp cumin seeds

1 tsp red bell pepper flakes

3 stock cubes

A dash of salt

1 tsp thyme

1/2 cup oil


Method

Heat some oil in a pan. Pour the blended tomatoes, red bell peppers, onions, ginger and garlic

 Stir and cook for 15 minutes. 

   Add the satchet of tomato paste and season with salt, stock cubes, thyme and dried red bell pepper flakes. Stir and cook for 5 minutes.

  Add the chopped ugu leaves and boiled eggs. Stir. Cover the pot and allow to simmer for 5 minutes.

  Serve with white rice, yam or potatoes.© Asmie's Kitchen

Egg Coated Fried Plantain

Ingredients:

4 ripe plantains

3-4 eggs

1/4 cup check spring onions

Salt to taste

Oil for shallow frying


Method

Peel the plantain and cut into thinly diagonal slice. Set aside.

  Whisk eggs with little salt. Add the chopped spring onions. And whisk lightly.

  Heat the oil in a pan. Coat the plantain one after the other in the eggs mixture and fry in hot oil on both sides till brown. Pack in a serviette to drain the oil. Repeat the same process till you exhaust the plantain and eggs.

Serve alone or with Ground pepper, Ketchup or tea ©Asmie's Kitchen

Easy Braised Korean Tofu

  Ingredients:

20 pieces raw Tofu 

1/2 cup chopped spring onions (plus 2 tbsps for sprinkling before serving the dish)

2 chopped red chilli peppers 

1 chopped onion

1/2 tsp chopped garlic

1 tsp sesame seeds (plus 1 tsp for sprinkling before serving the dish)

1 tsp salt

1 tsp ground black pepper

1/2 cup water

1 tsp chilli flakes

1 tsp sugar

1/2 cup oil for frying or use 2-3 tbsp oil

  Method

In a medium bowl, add the raw tofu. Season with salt and black pepper. Toss to combine set aside.

   In another bowl, add chilli flakes, sesame seeds, sugar, chopped onion, spring onions and chilli peppers, stir well.

  Heat the oil in a pan, add the tofu and fry till golden brown. Flip and fry the other side till golden brown too. You can fry the tofu in two batches. If you use half cup of oil to fry the tofu, reduce the quantity of the oil in a small bowl. And set aside.

  Pour the sauce mixture over the fried tofu that is on fire. Make a paste with 1 tbsp corn flour and some water. Pour over the tofu. Stir gently. Cook for 5 minutes on medium to low flame. Sprinkle the sesame seeds and chopped spring onions.

   Serve with white rice and enjoy!©Asmie's Kitchen

Sweet and Chilli Tofu Balls

Tofu Balls

Ingredients

Raw tofu (buy 300 naira tofu from sellers)

1/2 cup sifted flour 

2 peeled & grated carrots

1/2 cup chopped spring onions

1 large chopped red bell pepper/chilli pepper

1/2 tsp salt

1/2 tsp ground black pepper

1 stock cube (optional)

1/2 bottle oil for frying

  Method

In a medium mixing bowl, add the tofu and mash with a fork or mash. Add the chopped spring onions, grated carrots, red bell pepper, sifted flour, ground black pepper, salt and stock cube. Mix with hand. Mould or shape into medium balls. Arrange in a tray. 

  Heat the oil in a pan. Add the tofu balls one after the other into the pan. Fry on medium flame till golden brown and crispy. Flip over the other side and fry the other side till golden brown and crispy too. Repeat the process till you exhaust the raw tofu balls.

  Serve with ketchup or tomato sauce.

 Ingredients:

Fried Tofu Balls

1 satchet tomato paste

2 tbsp ketchup (optional)

1 tsp chilli flakes

1 tsp sesame seeds

A dash of salt

1/2 tsp chopped garlic

1/2 cup of water

1 tbsp oil

Method

In a medium bowl, add the tomato paste, ketchup (optional), chilli flakes, sesame seeds, a dash of salt and water. Stir to combine. 

  Heat the oil in a pan. Saute the garlic. Add the tomato mixture, stir and cook for 10 minutes on low flame. Add the fried tofu balls and flip gently to combine with the sauce. Cook for 1-2 minutes. Remove from the fire. Sprinkle some sesame seeds and chopped spring onions. Serve with white rice and enjoy!©Asmie's Kitchen

Tofu Pepper Soup

 This is a simple yet delicious soup for the cold weather. You will absolutely love it! It's cooked with few ingredients that you always have at home with the exception for the Tofu.

Ingredients:

1 medium bowl tofu (mash them a little or flake it with your hand)

1 cup peeled carrots (cut into match stick)

2 medium chopped onions

1/2 cup chopped spring onions

2 red chilli peppers

2 raw eggs

1 tbsp ground ginger and garlic

1 tsp chopped fresh curry leaves

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Secret of Cooking Spice

2 stock cubes

A dash of salt

1 tbsp corn flour paste (mix 3 tbsps water and 1 tbsp corn flour)

1/4 cooking spoon oil

Method

Heat the oil in a pan and saute the ginger, garlic and chopped curry leaves. Add the chopped onions, carrots and stir fry till soft. Pour some water enough to cook the Tofu, season with Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, stock cubes and some salt. Cover the pot and bring to the boil. Add the tofu and chopped spring onions and chilli pepper. Cover the pot and cook for 10 minutes. 

  Break the eggs in a bowl and whisk with a little salt. Hold a strainer directly on top of the pot as it is in the video, pour the whisked eggs, shake the strainer round the pot, the whisked eggs will pour directly into the pot in small strings, stir. Cook for 5 minutes.

 Make a paste with 1 tbsp of corn flour and little water. Stir well and pour into the pot. Stir, cover the pot and cook for 5 -7 minutes. Tofu Pepper Soup is ready!

 Sprinkle some chopped fresh spring onions and some sliced chilli pepper on top of the pepper soup. Serve and enjoy!©Asmie's Kitchen

Ingredients:

1 cup parboiled rice

5 sliced sausages 

4 peeled & diced carrots

1 large diced onion

5 deseeded & chopped red bell peppers

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp chopped garlic

1 tsp grated ginger

1 tsp chopped fresh curry leaves

1 large diced green bell pepper

3 stock cubes

1/2 cooking spoon oil

Method

Heat some oil in a pot. Fry the sausages till golden brown. Pack from the pot, put in a bowl and set aside.

  Add little more oil in the same pot you fried the sausages if necessary. Add the chopped garlic, ginger and fresh curry leaves. Saute for 30 seconds. 

Stir in the diced onion, carrots, red bell peppers and stir fry till the vegetables are soft. Add the fried sausages and stir. Season with Asmie's Kitchen Curry Powder, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice and stock cubes. Stir and cook for 5 minutes. Pour a cup of water using measuring cup. Cover the pot and bring to the boil. 

Add the parboiled rice and stir. Cover the pot and cook till the liquid has almost absorbed in the pot. Open the pot and add diced green bell peppers. Cover the pot and allow to simmer for 5 minutes.

3 tbsps olive oil

1/2 cup of 1/8 lime juice or use 2-3 limes squeeze the juice and use it

1 tsp salt

1 tsp ground black pepper

 Method

Roasted Sweet Potatoes & Baked Beans Sauce

This is a simple yet delicious breakfast. Feel free to add spices of your choice for the Roasted Sweet Potatoes. I used my own Spices "Asmie's Kitchen Spices.

  And for the Baked Beans Sauce, feel free to add vegetables of your choice like carrots, green bell peppers, zucchini/cougette, etc. You can also add sliced sausage, tuna fish, meat, etc.

Roasted Sweet Potatoes

Ingredients:

2 large sweet potatoes (peeled & cut into strips)

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp Asmie's Kitchen Ground Pepper

1 tsp Italian seasoning

1 tsp chilli flakes

1 tsp salt

5 tbsps Oil


Method

Combine the sweet potatoes and all the spices, chilli flakes and salt in a bowl, drizzle the oil and toss all together. Grease a baking pan with some oil or margarine. Roast in a preheated oven for 20-25 minutes or until you insert a toothpick and it comes out clean. Set aside.


Baked Beans Sauce

Ingredients:

 1 small tin of baked beans 

1 chopped medium onion

1 chopped large red bell pepper

1/2 tsp salt (optional)

1 tsp chilli flakes

1 tsp ginger and garlic paste

1 tsp chopped fresh curry leaves

1 tbsp oil

Method

Heat the oil in a pan. Saute the chopped fresh curry leaves with ginger and garlic paste. Add the chopped onion and red bell pepper, season with salt and red chilli flakes. Stir fry till the onion is translucent. Add the baked beans and stir. Cook on low flame for 5 minutes. Serve with the Roasted Sweet Potatoes and Scrambled Eggs and enjoy!© Asmie's Kitchen

Asian Cucumber Salad

Ingredients:

1 thinkly sliced cucumber

1/2 diced onion

1/4 cup chopped spring onions

2 tbsp sesame oil

2 tsps seasame seeds

1 tsp crushed chilli flakes

1-2  tsps soy sauce

1/4 tsp chopped garlic

 Method

In a small bowl, combine the sesame seeds, sesame oil, soy sauce, chilli flakes, soy sauce, garlic and stir to combine. 

 Combine the sliced cucumber, diced onion and spring onions in a separate bowl. Pour the dressing over the vegetables. Toss to combine. Sprinkle some more sesame seeds on top of the salad. Serve a lone or with any food of your choice and enjoy!© Asmie's Kitchen

Ingredients:

 10 Irish potatoes (peeled & cut into cubes)

1 large dry fish (deboned)

2 eggs

1/2 cup chopped spring onions

1 cup chopped ugu leaves

1 cup blended red bell peppers, onions, scotch, spring onions, ginger, garlic & curry leaves

2-3 stock cubes

1/2 cooking spoon oil

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Mixed Spices

1 tsp thyme

 Method

Heat some oil in a pan. Break the eggs in the pan. Sprinkle some salt. Stir fry to scramble. Set aside.

 Heat the oil in a medium pot. Add the blended red bell peppers, onions, scotch bonnet, ginger, garlic, curry leaves. Fry till the liquid is dried up. Add the deboned dry fish, diced onions and stir fry for 5 minutes. Add the potatoes, water enough to cook the potatoes, seasonings, spices, scrambled eggs and stir. Cover the pot and allow to cook till the liquid is almost dried up. 

Add the chopped spring onions and ugu leaves. Stir and cook for 5 more minutes. Serve warm and watery. ©Asmie's Kitchen

Chin Chin

This is our family's Chin Chin Secret Recipe. A never fail Recipe. Always rich and delicious. A must try Nigerian snack. 
 

Ingredients:

1 mudu flour 

3 eggs (you can use 4)

1 bag margarine 

1 cup sugar or milk milk tin (the cup is measuring cup)

1 tsp baking powder

1 bottle oil for frying

Milk (optional) 

  Method

Sift flour in a mixing bowl. Add the baking powder, sugar, little or pinch salt and margarine. Mix to combine with hand till it resemble breadcrumbs. Break the eggs and mix with hand too. Add some water and knead. As you are adding some water, you knead. Knead well to form a soft dough. Beat the dough on a surface or board till soft. Don't add too much water. The dough should be thick. Roll flat on a surface or board. Cut horizontally and cut into medium size. 

Heat the oil. Fry the oil with a slice of onion. The heat should be medium flame. When the oil is hot and the onion is golden brown, remove it from the oil and fry the chin chin in batches till golden brown.©Asmie's Kitchen

1 cup parboiled rice

2 diced & peeled carrots

1/4 cup boiled peas

1 large diced green bell pepper

1 large diced onion

1 tbsp ground ginger, garlic, fresh curry leaves & scotch bonnet

3 stock cubes

  Method

Heat the oil in a pan, work or pot. Saute the ginger, garlic, fresh curry leaves & scotch bonnet. Add the diced onion, carrots & half of the green bell pepper. Stir fry till halfway cooked. Add the chopped spinach, boiled peas and cook for a minute. Season with Asmie's Kitchen spices and stock cubes. Stir and add the parboiled rice and stir to combine. Cook on low flame. Potato Porridge

 This is a very simple food to prepare and yet delicious. It's an iftar inspiration. Feel free to add any vegetable of your choice. 

Ingredients:

8  big Irish potatoes (peeled & cubes)

2 dry fish (deboned)

1/4 cup ground crayfish

1 cup blended  red bell peppers & onions

1 tbsp ground ginger, garlic & curry leaves

1/2 cup chopped spring onions

2 stock cubes

Salt to taste

1/4 cooking spoon oil

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Mixed Spices

1/2 tsp Asmie's Kitchen Secret of Cooking Spice

Method

Heat the oil in a pot. Fry the ground ginger, garlic and fresh curry leaves for 30 seconds.

 Add the deboned dry fish and fry for 5 minutes. Then pour the blended red bell peppers, scotch bonnet and onions. Stir Fry for 5 minutes. 

 Add the potatoes, ground crayfish and pour some water enough to cook the potatoes. Season with salt, stock cubes and Asmie's Kitchen spices. Cover the pot and cook till the potatoes are almost done. Add the chopped spring onions. Cover the pot and cook for till the potatoes are completely cooked. Serve warm and enjoy!© Asmie's Kitchen

Ingredients:

1 pack noodles

2 eggs

3 diced tomatoes

1 diced onion

1/4 cup green peas boiled

1/4 cup chopped spring onions

1/2 courgette/ zucchini sliced (I used cucumber)

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Ground Pepper

1/2 cooking spoon oil 

  Method

Heat your steam pot. I used local steam pot. How to use it: place the steam pot on fire. Pour some water inside. Cover with the lid Switch on the fire and allow to boil. 

  Get a medium bowl and pour some water inside. Soak the noodles for 5 minutes. Open the steam pot and place the soaked noodles inside. Sprinkle some water on the noodles. Cover the steam pot and steam for 20-30 minutes. When the noodles is steamed, remove from the steam pot and put in a bowl.

  Heat the oil in a pan, break the eggs and add to the pan. Swirl round the pan and allow to set. Then stir fry to scramble. Add the diced onion, chopped spring onions, tomatoes and boiled peas. Stir Fry for 5 minutes. Season with the noodles seasonings. You may add 1 stock cube. Stir.

Pour 1 cup of water, use measuring cup. Cover the pan and bring to the boil. Stir in the steamed Noodles. Stir fry to combine. Cover the pot and allow to cook for 5 minutes. Noodles is ready! Serve warm and enjoy!©Asmie's Kitchen

  Note: If your noodles is well steamed, don't add water, when cooking the noodles. Just stir fry with the veggies and seasonings, cover the pan and allow to cook on medium to low flame.

Macaroni Salad

Ingredients:

1 cup macaroni

2 eggs

1 chopped onion

1/2 cup chopped spring onions

2 chopped tomatoes

3 tbsp cup chopped mint leaves

5-6 tbsp Mayonnaise

1/4 cup milk (dilute powdered milk with water)

1/4 tsp salt

1/2 tsp ground black pepper

 Method

Boil the macaroni in a pot till aldente. Strain and set aside.

  Boil the eggs and cut into medium size.

  In a medium bowl, add the macaroni, eggs, tomatoes, onions, spring onions, mint leaves, milk, salt and ground black pepper. Mix or toss well to combine. Serve with food of your choice or a lone and enjoy!© Asmie's Kitchen

Baked Egg Casserole

Ingredients:

Half loaf of bread (cut into cubes)

4 eggs

1 cup milk (dilute 1-2 tbsp of powdered milk with 1 cup water)

1 cup chopped spinach/green vegetable

2 roasted red bell peppers (cut into strips)

1/4 cup chopped onions

1/2 tsp chopped garlic

1/2 cup chopped spring onions

1/2 tsp salt

1 tbsp oil

   Method

Preheat your oven and grease baking pan with some oil or margarine.

  Heat the oil in a pan. Add the garlic and allow to splutter for 30 seconds. Add the spinach or green vegetable and some salt. Stir and saute for 2-4 minutes. Remove from fore and set aside.

   Mix the milk, eggs, salt, ground black pepper and Italian seasoning. Whisk well and set aside.

  Arrange half of the sliced bread in the greased pan. Add half of the sauteed spinach, red bell peppers, chopped spring onions and onions. Repeat the same process with the remaining ingredients. 

   Pour the whisked eggs and milk mixture over the bread in the pan. Bake in the preheated oven for 60-70 minutes. Insert tooth pick inside the baked egg casserole to check if it's baked. If the tooth pick comes out clean then it's baked.

   RAMADÀN FOOD/ COOKING TIPS*


      *PRESERVING BLENDED TOMATOES, PEPPERS & ONIONS*

    Boil blended/ground tomatoes, peppers and onions till the liquid is absorbed. Pour some oil on top (not much) without stirring it. And keep it for use. It will last for a while. This method helps in preserving it due to lack of electricity. But if there is electricity, keep in the freezer for use.


   * SPINACH*

Cut spinach into medium size. Spread in a large tray and dry under a shade. Or where there is air. Avoid places that has flies. Store in an airtight container for use. When using, soak in water for minutes, it will turn to fresh spinach. Use in your vegetable soup, jollof rice, and food that calls for use of spinach.


         *OKRO* 

 Slice fresh okro. Arrange in a tray. Sprinkle some ash (toka) on it and dry it. When fully dried, blend or pound in a mortar for use in soup.

         *BEANS*

Pound the beans to remove the skin. As you are pounding, you will be adding some water not much (sirfewa). Pour on an empty sack and allow to dry. Seive in a tray to remove the dry skin of the beans. Pour in a rubber with a lid and keep it. Whenever you want to use it, just soak it, after some minutes. Strain and add red bell peppers, onions and crushed fresh ginger then grind.

    *MILLET*
  A slightly pound the millet with some water (not much) (sirfewa).
  Seive in a tray.  Wash to remove the sand, etc Pour on an empty sack and allow to dry.  Put in a bucket, add spices i.e kayan kanshi citta, cloves, kimba, dried pepper (optional) and grind it. Pour in a container with a lid.

           *RICE*
If you are using local rice, remove the dirts like stones, etc, Pour in a container and cover with a lid and keep for using.

    *GROUNDNUT PASTE*
You can make or buy your groundnut paste for kunun gyada and keep it for using.

     *MAIZE POWDER*
     (Garin tuwo)
Buy maize in large quantity and take it to the mill for grinding. Seive and pour in a container with a lid (cover). So that when you want to make your swallow (tuwo), you don't need to seive it. It saves time.

        *FOOD STUFF*
Buy foodstuff no matter how little it is and keep for using. Like rice, beans, oil, palm oil, stock cubes, seasonings, pasta, salt, sugar, milk, Bournvita or Milo,liptons, etc or you can use my recipe to make homemade Milo and Bournvita at home to reduce the expense of buying from shops.

7 eggs (boiled, shells removed and sliced)

1 chilli pepper (sliced)

1 large green pepper (diced/ cut horizontally)

1 chopped onion

1/2 or 1 cup grated tomatoes

1 tsp chopped garlic

1/2 cup chopped spring onions

1 tsp Asmie's Kitchen curry powder

1 tsp Asmie's Kitchen Mixed Spices

2 stock cubes

1 tbsp ginger and garlic paste

Oil

 Method

Heat the oil in a pan. Fry the ginger and garlic paste. Add the onions, half of the chopped spring onions, green chilli, green peppers and fry for 5 minutes. Add the grated tomatoes, stock cubes, Asmie's Kitchen Curry Powder, Asmie's Kitchen Mixed Spices and Asmie's Kitchen Ground. Stir fry for few minutes. Add the boiled sliced eggs and stir. Add a cup of water, use measuring cup. You can make it watery, by adding 1 1/2 cups of water. Stir and the remaining chopped spring onions. Cover the pot and cook for 5 minutes. Egg chilli is ready! Vegetable Soup

Healthy vegetable soup. This is an easy soup you can make with your leftover vegetables. Serve a lone or with food of your choice that can go with the soup. Ingredients:

1 cup peeled & diced potatoes

1 cup peeled diced carrots

1 cup chopped spring onions

1 cup chopped large onion

1 tbsp ground ginger & garlic

1/2 cup diced green beans

1 cup blended tomatoes

2-3 stock cubes

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Ground Pepper

1 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp Adobo with Sazon seasoning

1/2 tsp of Onga Stew (optional)

1/2 medium cooking spoon oil

  Method

Heat the oil in a medium pot. Add the diced onions, spring onions, carrots abd ground ginger and garlic. Stir fry till halfway cooked. Add the blended tomatoes and stir fry for 5 minutes. Add the diced potatoes, spices and seasonings with 2 cups of water as seen in the video. Cover and cook for 5 minutes. Add the diced green beans, stir cover the pot and cook for 7-10 minutes or till all the vegetables are cooked and the liquid has reduced. Serve watery and enjoy! Serve alone or with food of your choice that goes well with the vegetable soup ©Asmie's Kitchen

Green Fried Rice

This is a natural green fried rice without artificial colour. It's just spring onions and green bell peppers that gave the fried rice greenish colour. Healthy food too. If you want the rice to be more greenish, you can add green food colour or fried rice spice. Video has been uploaded on my YouTube channel Asmie's Kitchen. Ingredients:

1 cup rice (washed & Strained)

2 Bunches of spring onions (cut into medium size)

2 green peppers (deseeded)

1 large diced onion

1/2 cup chopped spring onions

3 diced red bell peppers

3 peeled & diced carrots

1 tbsp ginger, garlic, fresh curry & mint leaves

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Secret of Cooking Spice

2 stock cubes

1 tsp Adobo with Sazon seasoning

1/8 tsp cumin seeds

1/2 cooking spoon oil


Method

Blend the spring onions with green peppers and some water enough to cook 1 cup of rice in a blend. Pour in a medium pot. Bring to the boil. Add the rice, 1 stock cube and adobo with Sazon seasoning. Stir and allow to cook.  Remove from the fire and set aside.

   Heat the oil in a medium pan or wok. Add cumin seeds and allow to splutter for 30 seconds. Add the onions, ground ginger, garlic, fresh curry and mint leaves and carrots. Stir fry till halfway cooked. Add the red bell peppers, seasonings and spices. Add the cooked rice and stir. Add the chopped spring onions and stir. Cook for 5 minutes. © Asmie's Kitchen

Simple Fried Rice

 This dish is a lunch Inspiration. Very simple and delicious. If you are thinking of what to cook, try this recipe. The ingredients are what you always have at home. The eggs and the vegetables. Ingredients:

1 cup rice (parboiled)

2 eggs

2 chopped onions

4 chopped red bell peppers

1/2 cup chopped spring onions

1/4 cup ground crayfish

1 tsp ginger & garlic paste

1 tsp fennel seeds

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp Ground Pepper

 3 stock cubes

1/2 cooking spoon oil

Method

Whisk the eggs with some salt in a small bowl. Heat 1 tbsp of oil and stir fry the eggs to scramble. Remove the pan from the fire. Pack in a plate and set aside.

   Heat 1 tbsp of oil in the same pan. Add the chopped red bell peppers and onions. Fry for 5 minutes. Pack in a plate and set aside.

  Heat the remaining oil in the same pan. Add the fennel seeds and allow to splutter for 30 seconds. Add the carrots, ginger and garlic paste. Stir fry till the carrots are halfway cooked. Add the fried chopped red bell peppers and onions with the scrambled eggs. Season with the spices and stock cubes. Stir fry for a minute. 

  Stir in the rice and crayfish. Add the chopped spring onions. Stir and allow to cook for 5-7 minutes. Serve warm and enjoy!© Asmie's Kitchen

Ingredients: 

1 cup rice

Pieces of kpomo (cleaned & cut into medium size)

3 medium dry fish (deboned)

1/4 cup  ground crayfish

2 large peeled & diced carrots

2 diced onions

1 cup ground or blended red bell peppers & scotch bonnet

1 cup chopped spring onions

1 tbsp ginger, garlic, fresh curry & mint leaves

1 tsp locust bean

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Secret of Cooking Spice

3 stock cubes

Oil

     Method

Heat the oil in a medium pot. Fry the ginger, garlic, fresh curry and mint leaves for 30 seconds. Add the locust beans and fry for 30 seconds. Stir in the ground red bell peppers and scotch bonnet and stir fry for 5 minutes. Add the cooked kpomo and dry fish. Stir fry for 5 minutes. Pour 2 cups of water, add Asmie's Kitchen Curry Powder, Asmie's Kitchen mixed Spices, Asmie's Kitchen secret of Cooking Spice, thyme, stock cubes and stir. Cover the pot and bring to the boil.

  Add the parboiled rice, ground crayfish and carrots. Stir and cover the pot. When the rice is cooked add chopped spring onions and cover the pot again. Cook gor 2 more minutes. Or switch off the fire and allow the steam from the rice to cook it. Concoction Rice is ready! © Asmie's Kitchen

Beef & Noodles Soup

 If you are a fan of noodles, you will definitely love this. It's a noodle recipe with a twist. Simple yet delicious. Major ingredients are beef, noodles and eggs. Ingredients:

1 pack noodles

Beef (cut into strips)

2 eggs

1 large chopped onions

1 tsp chopped garlic

1 cup chopped spring

2 chopped red bell peppers

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Ground Curry powder

3-5 tbsp Oil 

Method

Heat the oil in a medium pot. Fry the beef and fry till no longer pink. Add the chopped garlic, onions and fry till the onions are translucent. Add the chopped red bell peppers and fry for 3 minutes. 

Pour some water enough to cook a pack of noodles. Cover the pot and bring to the boil. Break the eggs and add to the pot, allow to cook for a minute or two. Stir with a wooden spoon. Cover the pot again and cook for few minutes. Add the noodles, cover the pot and allow to cook. It should be a bit watery. Serve warm and enjoy! © Asmie's Kitchen
