Shrimp Fried Rice

 Ingredients:

2 cups rice

1 cup dry shrimps (250ml)

1/2 cup diced carrots 

1 big diced onion

1/2 cup green peas

1 tbsp Asmie's Kitchen Curry Powder 

1 tsp Asmie's Kitchen Egyptian Spice Mix 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 tbsp ground fresh garlic, fresh curry leaves fresh oregano 

2 stock cubes 

2 scoops (ludayi) oil

Salt to taste

Pieces of chopped fresh curry leaves for garnishing 

Soak the shrimps in warm water for 8-10 minutes. Strain in a strainer and pour some little amount of water over it. Set aside

Place a pan on the fire, add the shrimp in the pan without adding oil and roast for 3 minutes on medium flame. Remove the pan from the fire and set aside.

Place a pot on the fire, add the oil with ground garlic, fresh curry and oregano leaves. Saute for 30 seconds. Add the onions and fry till almost translucent. Add the carrots, chopped fresh chilli peppers, boiled peas, salt, stock cubes, Asmie's Kitchen Curry Powder, Asmie's Kitchen Meat Spice Blend, Asmie's Kitchen Egyptian Spice Mix. Stir fry for 5 minutes. Add the shrimp stir and cook for 5 minutes. Lastly, add the parboiled rice and stir to combine. Cover the pot and allow to cook for 5 more minutes.
