Black Pepper Chicken

This is a simple yet delicious chicken delicacy. Can be served alone or as a side dish with white rice, etc. Video has been uploaded below 👇 Watch and don't forget to subscribe to our YouTube channel for more simple healthy and delicious recipes.


Ingredients:

Chicken thighs

2 large red bell peppers (cut into strips)

2 large green bell peppers (cut into strips)

2 diced onions

2 tsp ground black pepper 

Salt to taste

2 stock cubes or soy sauce

2 tbsps Corn flour

1/2 cup water (use measuring cup)

1/8 tsp salt

1 tsp sugar

1/2 cup Oil


Method 

In a medium bowl, add the chicken thighs, 1 tbsp corn flour, 1 stock cube or 1 tbsp soy sauce, 1 tbsp water. Mix and set aside.

For the Sauce:

In a medium bowl, add 1/2 cup water 1 stock cube or 1 tbsp soy sauce, 1 tbsp corn flour, 2 tsps ground black pepper and 1 tbsp sugar and 1/8 tsp salt. Stir to combine. 

Heat the oil in a pan and fry the chicken thighs in batches, flip and fry the other side. It should be 80% cooked. Remove from the pan and set the chicken aside.

  Reduce the oil from the pan leave 2 tbsps oil. Add chopped onions and stir fry for a minute. Add the green bell peppers, red bell peppers and onions. Stir fry for 3 minutes. Add the sauce and bring to the boil. Lastly, add the chicken thighs and stir. Cook for few minutes and remove from the fire. Serve a lone or with white rice and enjoy!© Asmie's Kitchen

This is a delicious and hearty meal. Served as lunch. 


 Ingredients:

2 1/2 cups of rice
Roasted beef
2 cups of grated bell peppers & tomatoes
1 sachet tomato paste
and allspicenion
1 sliced onion
2 sliced tomatoes
1 tsp thyme
1/4 tsp cumin seeds
1/4 tsp fennel
1 tbsp curry
5 bay leaves
1 tsp ground ginger
A dash of allspice
1 tsp paprika
1 tbsp ginger & garlic paste
A pinch of ground cardamom seeds
5 stock cubes
Salt to taste
3 1/2 cooking spoon oil

Method

Heat the oil in a pan. Add the fennel seeds and cumin seeds and fry for a minute. Add the diced onions, thyme, ground cardamom, and fry for a minute. Then add the tomato paste and stir fry for 2 minutes. Add the grated bell peppers and tomatoes, curry, and salt. Stir occasionally till the tomatoes and peppers are fried. Add the roasted beef and stir fry for 3-5 minutes. Now, pour some water enough to cook the rice. Add the bay leaves.
    Wash the rice and strain. Crush the stock cubes and add it inside the pot with the paprika, ground ginger, all spice. Cover the pot and bring to the boil. Add the washed rice and stir. Cook on medium flame till the water from the rice has almost absorbed. Stir the rice. Cut a foil paper and cover the pot with it. Then cover with the lid. This process will enable the rice to absorb quickly and easily. Open the pot and add the sliced onions and tomatoes. Cover again and increase the flame. Cook for 5 more minutes on high flame till you can perceive the smoky aroma. Remove the pot from the fire.Serve warm with a chilled drink and enjoy!©Asmie's Kitchen
