Black Pepper Chicken

Ingredients:
Chicken thighs
2 large red bell peppers (cut into strips)
2 large green bell peppers (cut into strips)
2 diced onions
2 tsp ground black pepper
Salt to taste
2 stock cubes or soy sauce
2 tbsps Corn flour
1/2 cup water (use measuring cup)
1/8 tsp salt
1 tsp sugar
1/2 cup Oil
Method
In a medium bowl, add the chicken thighs, 1 tbsp corn flour, 1 stock cube or 1 tbsp soy sauce, 1 tbsp water. Mix and set aside.
For the Sauce:
In a medium bowl, add 1/2 cup water 1 stock cube or 1 tbsp soy sauce, 1 tbsp corn flour, 2 tsps ground black pepper and 1 tbsp sugar and 1/8 tsp salt. Stir to combine.
Heat the oil in a pan and fry the chicken thighs in batches, flip and fry the other side. It should be 80% cooked. Remove from the pan and set the chicken aside.
Reduce the oil from the pan leave 2 tbsps oil. Add chopped onions and stir fry for a minute. Add the green bell peppers, red bell peppers and onions. Stir fry for 3 minutes. Add the sauce and bring to the boil. Lastly, add the chicken thighs and stir. Cook for few minutes and remove from the fire. Serve a lone or with white rice and enjoy!© Asmie's Kitchen
