Watermelon Smoothie

 Ingredients:

3 cups chopped watermelon 

3-4  sliced bananas 

1 cup milk (250 ml)

1/8 tsp vanilla flavour 


Method 

Add the watermelon, bananas, milk and vanilla flavour in a blender. Blend till smooth. Refrigerate and serve chilled.© Asmie's Kitchen

Veggies Congee

 Ingredients;

2 cups of diced potatoes 

1 can mushroom

2 diced onions 

2 diced green peppers 

3 diced red bell peppers 

1 handful chopped spring onions 

2 diced carrots

1/2 tsp chopped basil leaves 

2 stock cubes 

1 tsp ground turmeric 

1/4 tsp Asmie's Kitchen Mixed Spices 

1/4 tsp Asmie's Kitchen Ginger 

1/4 tsp Asmie's Kitchen Secret of Cooking Spice 

5 tbsps oil 

Method 


Place a pan on fire. Add the diced potatoes, diced onions, green peppers, red bell peppers, chopped spring onions, carrots, mushrooms, basil leaves, oil, stock cubes and some water, enough to cook the veggies. Cover the pot and cook for 5-7 minutes on medium flame. Season with turmeric, Asmie's Kitchen mixed spices,  secret of cooking and  tsp ginger. Stir and cook till the veggies are tender, especially the potatoes. Serve a bit watery.©Asmie's Kitchen

Fresh Green Herb and Vegetable

This is a simple yet healthy and delicious soup. Prepared with green herbs and vegetables. Very aromatic. The soup can be paired with white rice or food of your choice. Ingredients:

3 cups fresh chopped spring onions, mint leaves, fresh curry leaves, fresh oregano, diced onions 

1 tbsp chopped fresh ginger and garlic 

Chicken parts

1 diced onion

1/4 tsp Asmie's Kitchen Mixed Spices 

1/4 tsp Asmie's Kitchen Secret of Cooking Spice 

1/2 tsp salt

2 stock cubes 

1 tsp cloves, black pepper, cumin seeds and cardamom pods 

1/2 medium cooking spoon oil 


Method 

Blend the fresh vegetables i.e spring onions, mint leaves, fresh curry leaves, fresh oregano, onions, garlic and ginger with 1 cup (250 ml) or half cup of water. 

Heat some oil in a pot. Sautè cloves, pieces of black pepper, cardamom pods and cumin seeds for 10 seconds. Add the chicken parts and stir fry now and then for 5 minutes.

 Pour the blended vegetables i.e spring onions mint leaves, etc into the pot. Season with Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, salt and stock cubes. Stir, cover the pot and allow to cook for 5-7 minutes. Add the diced onions and stir. Cook for 3-5 minutes on low flame.

Stir Fry Liver & Vegetables

Ingredients:

1/4 kg liver (Wash & cut into strips)

3 red bell peppers (deseeded & cut into strips 

1 large green bell peppers (deseeded & cut into strips)

1 large onion (diced)

1/2 cup chopped spring onions 

2 stock cubes 

1/4 tsp Asmie's Kitchen Curry powder 

1/4 tsp Asmie's Kitchen Mixed Spices 

1/4 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tbsp ground ginger, garlic, fresh curry leaves & oregano 

1/2 medium cooking spoon oil 

(1/2 tsp salt, 1/2 tsp thyme, 2 crushed garlic for boiling the liver)

Method 

Place a pot on the fire and add the liver strips. Pour some water to almost cover the content. Sprinkle some salt, a little bit of ground garlic and a dash of thyme. Cook till halfway cooked. Strain and set aside.

  Heat some oil in a pan and sautè the ground ginger, garlic, fresh curry leaves and oregano. Add the liver with Asmie's Kitchen Curry powder, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, stock cubes and stir fry on medium flame for 5 to 7 minutes. Add the vegetables: red bell peppers, green peppers, onions and spring onions. Stir fry now and then on low flame till the vegetables are almost cooked a and a little bit crunchy. Stir Fry Liver and Vegetables are ready! Serve with fried rice, jollof rice, cous cous, white rice, etc and enjoy!©Asmie's Kitchen

Oven Baked Jollof Rice

This is a unique method of Cooking Jollof Rice. When you are tired of cooking it the regular way, cook it this way by baking it in the oven. You will enjoy it.

INGREDIENTS:

2 cups of rice (250ml cups)

3 tbsps tomato paste

1 small cup of green peas

2 carrots (peeled & diced)

1 large onion (diced)

1 small cup of oil

1 satchet thyme

1 satchet onga (stew)

3 stock cubes

1 tbsp salt

1 tbsp ground white pepper

1 tbsp crushed ginger


  METHOD


Place a medium pot of water on the fire and allow to boil. Add the rice and parbboil for 5-10 minutes.Wash and strain the rice. Put a foil paper in a baking pan. Add the ingredients in the pan covered with foil paper. Stir well. Cover the top with a piece of foil paper. Bake in a preheated oven for 1 hour. After 1 hour, remove from the oven. Jollof Rice (Oven Baked) is ready. Serve alone or with Peppered chicken, meat, salad and enjoy! (c)Asmie's Kitchen

Ingredients: 

1/2 small shredded cabbage 

 2 large diced carrots

10 plump tomatoes 

3 large diced red bell peppers 

1 diced onion 

1 cup chopped spring onions 

1 tbsp chopped fresh curry leaves & oregano 

6 tbsps oil 

2 stock cubes 

1/2 tsp Asmie's Kitchen Secret of Cooking Spice 

1/2 tsp Asmie's Kitchen Mixed Spices 

1/2 tsp Asmie's Kitchen Curry Powder 

Method 

Heat the oil in a pan.  Saute the chopped fresh curry leaves and oregano. Add the onions, red bell peppers, onions, carrots, season with stock cubes, Asmie's Kitchen Secret of Cooking Spice, Mixed Spices and Curry powder. Stir fry till the vegetables are halfway cooked. Finally, add the shredded cabbage and chopped onions, stir and cook for 5 minutes on medium to low flame. Serve with Moi Moi, White Rice, Yam, Potatoes, Cous Cous, Spaghetti or Macaroni and enjoy!©Asmie's Kitchen

Double Decker Grilled Egg & Veggies Sandwich

A simple yet delicious grilled Sandwich. This is for sandwich lovers. If you love sandwich, this is for you. I really enjoyed it. And that sauce was delicious. The aroma was very nice.

Ingredients:

6 slices of bread 
3 large eggs 
1 cucumber (sliced)
3-4 plump tomatoes 
2 pieces of fresh lettuce 
1 handful of chopped spring onions 
1/8 tsp chilli flakes 
1/8 tsp salt 

Tomato sauce Ingredients:

Blended plump tomatoes
1/4 tsp Italian seasoning 
1/4 tsp salt 
1/4 tsp ground coriander 
1/4 tsp ground black pepper 
6 tbsps oil 


Method 

Pour the blended tomatoes with a dash of baking powder in a pot and bring to the boil. The use of baking powder is to remove the sour from the tomatoes. Add the oil, salt, ground black pepper, ground coriander, Italian seasoning and stir. Cook on medium to low flame. Set aside.

Grilled Sandwich 

Break the 3 eggs in a bowl. Season with salt and chilli flakes. Add the chopped spring onions. Whisk and set aside. 
    Preheat a grill, brush some oil in the grill and pour the whisked eggs. Cover and allow to cook for 2-3 minutes. Remove gently from the grill and set aside. Cut into two.

Rub some of the tomato sauce on a slice of bread. Place one of the grilled eggs on top of the sauce. Take the second slice of bread and rub the tomato sauce. Place it on top of the egg. Place a lettuce on top of it. Arrange sliced tomatoes and cucumber. Feel free to add any vegetables of your choice. Rub some of the tomato sauce on the third slice of bread and cover and vegetables. 
  Repeat the process with the remaining ingredients. Preheat the grill and arrange the sandwich. Grill for 5 minutes. Cut into desired size and enjoy alone or with tea or juice and enjoy!©Asmie's Kitchen
