Sausage Jollof Rice


 This is a lunch Inspiration. Very simple and delicious. It's a must try recipe. Do you know you can serve this food for your guests? Oh! Yes you can. Especially if they are fans of sausage. If you don't like sausage, you can replace it with beef or chunks of chicken breast. Feel free to add vegetables of your choice.

Ingredients:

1 cup parboiled rice

5 sliced sausages 

4 peeled & diced carrots

1 large diced onion

5 deseeded & chopped red bell peppers

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp chopped garlic

1 tsp grated ginger

1 tsp chopped fresh curry leaves

1 large diced green bell pepper

3 stock cubes

1/2 cooking spoon oil

Method

Heat some oil in a pot. Fry the sausages till golden brown. Pack from the pot, put in a bowl and set aside.

  Add little more oil in the same pot you fried the sausages if necessary. Add the chopped garlic, ginger and fresh curry leaves. Saute for 30 seconds. 

Stir in the diced onion, carrots, red bell peppers and stir fry till the vegetables are soft. Add the fried sausages and stir. Season with Asmie's Kitchen Curry Powder, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice and stock cubes. Stir and cook for 5 minutes. Pour a cup of water using measuring cup. Cover the pot and bring to the boil. 

Add the parboiled rice and stir. Cover the pot and cook till the liquid has almost absorbed in the pot. Open the pot and add diced green bell peppers. Cover the pot and allow to simmer for 5 minutes.

 Sausage Jollof Rice is ready! Serve warm and enjoy!©Asmie's Kitchen

Avocado Salad


You can call this delicious salad as Avocado Salad or healthy Salad. It contains ingredients like avocado, cabbage, boiled eggs, onions, cucumber, sweet corn and the simple salad dressing. It can be served a lone or with food of your choice.

  Ingredients:

2 avocados (peeled and cut into medium size)

1/2 medium cabbage (shredded)

1 big cucumber (cut into medium size)

1 medium onion (diced)

1 small tin of sweet corn

2-3 boiled eggs (sliced)

 Salad Dressing:

3 tbsps olive oil

1/2 cup of 1/8 lime juice or use 2-3 limes squeeze the juice and use it

1 tsp salt

1 tsp ground black pepper

 Method

In a medium bowl, combine the shredded cabbage, cucumber, onions, sweet corn, sliced eggs and avocado. Add the salad dressing olive oil, salt, ground black pepper. Toss or mix to combine. Serve alone or with food of your choice.©Asmie's Kitchen

Roasted Sweet Potatoes & Baked Beans Sauce


 

This is a simple yet delicious breakfast. Feel free to add spices of your choice for the Roasted Sweet Potatoes. I used my own Spices "Asmie's Kitchen Spices.

  And for the Baked Beans Sauce, feel free to add vegetables of your choice like carrots, green bell peppers, zucchini/cougette, etc. You can also add sliced sausage, tuna fish, meat, etc.

Roasted Sweet Potatoes

Ingredients:

2 large sweet potatoes (peeled & cut into strips)

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Mixed Spices

1 tsp Asmie's Kitchen Secret of Cooking Spice

1 tsp Asmie's Kitchen Ground Pepper

1 tsp Italian seasoning

1 tsp chilli flakes

1 tsp salt

5 tbsps Oil


Method

Combine the sweet potatoes and all the spices, chilli flakes and salt in a bowl, drizzle the oil and toss all together. Grease a baking pan with some oil or margarine. Roast in a preheated oven for 20-25 minutes or until you insert a toothpick and it comes out clean. Set aside.


Baked Beans Sauce

Ingredients:

 1 small tin of baked beans 

1 chopped medium onion

1 chopped large red bell pepper

1/2 tsp salt (optional)

1 tsp chilli flakes

1 tsp ginger and garlic paste

1 tsp chopped fresh curry leaves

1 tbsp oil

Method

Heat the oil in a pan. Saute the chopped fresh curry leaves with ginger and garlic paste. Add the chopped onion and red bell pepper, season with salt and red chilli flakes. Stir fry till the onion is translucent. Add the baked beans and stir. Cook on low flame for 5 minutes. Serve with the Roasted Sweet Potatoes and Scrambled Eggs and enjoy!© Asmie's Kitchen

Mango Salad

Ingredients:

2 peeled and diced ripe mangoes (not over riped)

1 diced onion

3 peeled & grated  carrots

1 diced cucumber

1/4 cup chopped mint leaves

2 tsps olive oil

1 tsp Apple Vinegar

1/2 tsp salt

1/4 tsp ground black pepper

  Method

In a bowl, add the diced mangoes, onion, cucumber, carrots and chopped mint leaves. Add the olive oil, Apple vinegar, ground black pepper and salt. Mix everything together. Serve alone or with food of your choice.© Asmie's Kitchen

Mango Lassi

Ingredients:

3 mango pulp or cut the mango flesh into desired size

1 cup yogurt

1/2 cup milk

2 tbsps sugar

A dash of cinnamon (optional)

Method

Blend the mango pulp or flesh into a blender together with the yogurt, milk, sugar and cinnamon. Blend till smooth. I garnished with mint leaves. Serve and enjoy. © Asmie's Kitchen

Asian Cucumber Salad



Ingredients:

1 thinkly sliced cucumber

1/2 diced onion

1/4 cup chopped spring onions

2 tbsp sesame oil

2 tsps seasame seeds

1 tsp crushed chilli flakes

1-2  tsps soy sauce

1/4 tsp chopped garlic

 Method

In a small bowl, combine the sesame seeds, sesame oil, soy sauce, chilli flakes, soy sauce, garlic and stir to combine. 

 Combine the sliced cucumber, diced onion and spring onions in a separate bowl. Pour the dressing over the vegetables. Toss to combine. Sprinkle some more sesame seeds on top of the salad. Serve a lone or with any food of your choice and enjoy!© Asmie's Kitchen

Crushed Millet Balls & Milk


Crushed Millet Balls (Dambun Fura) is a refreshing drink which consists of (Dambun Fura), milk, sugar and grated coconut. Combined all together and serve immediately. Or refrigerate to chill before serving. Good for this hot weather.

Ingredients:

Crushed Millet Balls (Dambun Fura)

Kindirmo

Sugar

Grated Coconut

Method

Combine all the ingredients in a bowl, one at a time. Stir to combine. Put in a fridge to chill. Serve and enjoy! © Asmie's Kitchen
