Stir Fry Noodles

 This is a simple yet healthy and delicious noodle delicacy. It can be served as breakfast, lunch or dinner. There are many ways to enjoy your noodles and this is one of them. Feel free to substitute with vegetables of your choice i.e cabbage, broccoli, cauliflower, peas, etc. Video has been uploaded on my YouTube channel. Ingredients:

1 pack noodles 

Noodles seasoning

2 eggs 

3 peeled diced carrots 

3 diced red bell peppers 

1/4 cup chopped green beans 

1 diced onion

1/2 cup chopped ugu leaves/ spinach 

2 tbsps ground crayfish 

1/2  cooking spoon oil

Asmie's Kitchen Ground Pepper (yaji)

  Method

Place a pot of water on fire. Bring to the boil. Make sure the pot is covered. Add the noodles, cover the pot again and parboil. Strain and set aside. Reserve the noodle water.

  Heat 3-4 tbsps of Oil in a pan. Whisk the eggs with a pinch of salt and pour into the pan. Allow to set then stir-fry to scramble. Pack from the pan and set aside.

   In the same pan, add the remaining oil. Add the chopped onions and carrots and stir fry till halfway cooked. Add the red bell peppers, green beans, ugu leaves/spinach, ground crayfish, noodles seasoning, Asmie's Kitchen Curry Powder, Mixed Spices and Ground Pepper. Pour the noodle water and stir. Cook for 5 minutes. Add the scrambled eggs and the parboiled noodles and stir. Cook for 2-3 minutes. Serve warm and enjoy!©Asmie's Kitchen
