Chicken Salad
A delicious chicken salad. Served a lone or as a side dish with food of your choice. Feel free to add vegetable of your choice.
Ingredients:
Fresh chicken thighs (chicken breast can also be used)
1 medium bunch of lettuce (plucked & washed in salty water)
4 peeled carrots (cut according to your desired size)
1 chopped onions
1 chopped spring onions
Salad Dressing:
2 tbsps oil
2 tbsps apple vinegar
1 tbsp honey
1/4 tsp salt
1/4 tsp ground black pepper
Method
Place a pot on the fire, wash the chicken thighs and add to the pot with 1 tsp salt, 1 tsp ground black pepper and 1 stock cube. Stir and cover the pot and cook till the liquid is almost absorbed. Remove the chicken from the pot allow to cool, then shred with a knife and dispose the bones.
In a salad bowl, add the lettuce, carrots, chopped onions, spring onions and shredded chicken.
For the dressing:
Combine the oil, apple vinegar, honey ground black pepper and salt. Whisk to combine.
Pour the salad dressing over the salad and toss to combine. Serve alone or as a side dish with food of your choice. ©Asmie's Kitchen
