Onion Rings

Ingredients:

1 large onion 

3 tbsps flour

2 Cups ground bread crumbs

1 tsp Asmie's Kitchen Paprika 

1 tsp ground black pepper 

1 tsp Asmie's Kitchen Ground Garlic 

1 tsp chilli flakes 

1 tsp thyme

1 tsp salt

1/2 bottle oil 


Method

Sift the flour in a mixing bowl. Add the ground black pepper, chilli flakes, salt, thyme, Asmie's Kitchen paprika and garlic. Pour some water to give you a thin paste. Mix well with a whisk till free of lumps. Set aside. 

Wash and slice the onion into thick slices. Separate them from one another. 

Coat the onion rings one after the other into the flour paste. Coat in the ground bread crumbs and fry in hot oil till golden brown and crispy. Flip and fry the other side till crispy and golden too. Place on a serviette to drain the excess oil. 

Serve with a mixture of mayonnaise and ketchup. You can also serve with jollof rice. Enjoy!©Asmie's Kitchen

Shakshuka with Garlic Toasted Sliced Bread

 A simple yet delicious hearty meal. This is a quick fix and an Iftar Inspiration. Try this and thank me later.


Ingredients:

20 pieces of plump tomatoes (washed & cut into cubes)

3 red bell peppers (washed, deseeded & cut into cubes)

1 large diced onion 

2 large eggs

1 tsp paprika 

1 tsp ground black pepper 

1 -2 stock cubes

1 tsp salt to taste

1 tsp crushed garlic 

5 tbsps oil 

Method 

Heat the oil in a pan. Add the diced onions and crushed garlic. Stir fry till aldente. Add the chopped red bell peppers, tomatoes, salt, stock cubes, paprika and stir now and then till the tomatoes are cooked. Pour 1/2 cup (125 ml cup) of water and stir. Cook for two minutes. Make two holes inside the tomato sauce and add break the eggs in the holes. Cover the pan and cook for 4-5 minutes. Your Shakshuka is ready! Serve with Garlic Toasted Sliced Bread and enjoy!©Asmie's Kitchen 

For the Garlic Toasted Sliced Bread

Ingredients:

4 sliced bread

4 pieces of big garlic (crushed)

1 tbsp chopped parsley

3 tbsps of mayonnaise 


Method 

Add the mayonnaise, crushed garlic and chopped parsley in a small bowl. Mix everything together to combine. Spread on each of the sliced bread and toast in the oven or pan till brown and crispy. Serve with Shakshuka and enjoy!©Asmie's Kitchen

Asmie's Fresh Avocado Toast Delight 🥑

Ingredients:

1 big avocado 

2 plump sliced tomatoes 

1 small diced onion 

1 tbsp lemon juice 

Pinch salt 

1/2 tsp chilli flakes or ground black pepper

Chopped mint leaves 


Method

Wash and cut avocado into two. Remove the seed. Scoop the flesh and put in a small bowl, add lemon juice, salt, chilli flakes and mix well. Set aside.

Slice bread, it should be thick slices. Apply butter on each slice bread (optional). Toast it in a pan or in the oven till crispy. Apply the avocado mix on top of each slice bread. Arrange the tomato slices, diced onion sprinkle some salt and chilli flakes. Serve and enjoy! ©Asmie's Kitchen

This is not your regular fried yam. It's a crispy spiced yam delight. Crispy and delicious 👌 Served for Iftar. Get a cup of tea and enjoy this yam delight. Tried and trusted. You will crave for more. My family and I really enjoyed it. 

  Ingredients: 

1 small yam (peeled, sliced & cut into half)

1 cup (250 ml measuring cup) grated or blended red bell peppers & onions 

1 tsp paprika

1 tsp garlic paste 

1 tsp ginger paste

1 tsp thyme

1 tsp ground fresh curry and oregano leaves 

1 crushed stock cube

Pinch of salt 

1/2 bottle oil

Method

In a large bowl, blended or grated red bell peppers onions, garlic and ginger paste, thyme, paprika, ground oregano and curry leaves, crushed stock cube, little amount of salt and tablespoons of oil. Mix everything together to combine. Add the sliced yam and mix well. Each yam should be coated well with the sauce. 

  Heat some oil in a pan. Fry the yam in batches till golden and crispy. Repeat the process with the remaining spiced yam. 

Serve with tomato sauce or ketchup and salad. Enjoy!©Asmie's Kitchen

Ingredients:

5 slices of bread

2 large eggs 

1/2 cup milk (125 ml measuring cup)

1 tbsp sugar

A little drop of vanilla flavour 

A pinch of ground cinnamon 

3 tbsps butter 

1 1/2 tsps

Method 

In a mixing bowl, break the eggs, add the milk, sugar, vanilla flavour and a dash of ground cinnamon. Whisk well to combine. 

  Heat 1 tbsp of butter and 1/2 tsp of oil in a pan. Dip a slice of bread into the egg-milk mixture for 20 seconds and flip the other side for same seconds. Remove from the egg- milk mixture Fry in the butter-oil till golden brown. Flip the other side and fry till golden brown too. Repeat the same process with the remaining slices of bread. When the melted butter and oil has finished. Quickly add another 1 tbsp butter and 1/2 tsp oil in the pan and continue frying the toast. 

  Serve with honey, grapes and dust some icing sugar on top. Enjoy!©Asmie's Kitchen

1 small tin baked beans 

3 large eggs (boiled & cut each into 4)

1 small shredded cabbage (washed & strain)

3 big carrots (peeled & cut into strips)

3 big plump diced tomatoes 

1 chopped onion 

Pieces of shredded lettuce (washed and strained)

2 tbsps ketchup 

1 stock cube

Method 

In a bowl, add the shredded cabbage, lettuce, diced tomatoes, onion, carrots, baked beans, eggs, ketchup and stock cubes. Mix to combine. Put in the fridge to chill. Serve with food of your choice.©Asmie's Kitchen

Asmie’s Signature Fish & Chips Platter

A simple healthy Iftar Inspiration: Asmie’s Signature Fish & Chips Platter. 

Ingredients:

4 Fish Fillets 

3 tbsps flour

1 tbsp lemon juice

1 tsp ground black pepper 

1 tsp chilli flakes

1 tsp Asmie's Kitchen Ground Garlic 

1 tsp salt

1 tsp Italian seasoning 

1 cup (250 ml) oil


  Chips Ingredients: 

20 pieces Irish Potatoes 

1/2 bottle oil 


 Salad Ingredients:

1 small bunch lettuce (washed & shredded)

3 peeled carrots (cut into strips)

1 thinly diced onion 

3 chopped plump tomatoes 

1 tsp lemon juice 

1/8 tsp ground black pepper 

1/8 tsp salt

1 tbsp olive or vegetable oil 


 Method 

Let's start with the fish. How to get fillet.

Cut the heads and tails of the fresh fish. Cut each fish horizontally into two. Gently remove the bones and intestines. Wash and place in a strainer to drain for 30 minutes or more. 

When fully drained, add the flour, salt, ground black pepper, Italian seasoning, chilli flakes, Asmie's Kitchen Ground Garlic, and the lemon juice. Whisk the ingredients together. Dip the fish fillets one after the other inside the flour mix and coat well. 

  Heat the oil in a pan with 1/8 tsp crushed garlic for extra flavour (optional). Fry the fish fillets in batches. Place on a serviette to drain the excess oil. Set aside.

  Now, for the potatoes, peel the potatoes and cut into wedges. Rinse with water and strain. Then sprinkle some salt and toss to combine. Place another pan on the fire and add some oil. When hot, fry the potatoes in batches and set aside.

  For the salad. Get a medium bowl, add the shredded lettuce, diced tomatoes, diced onion and carrot strips. 

  Mix the oil, salt, lemon juice and ground black pepper. Whisk with a fork and pour over the salad. Toss to combine. Your salad is ready!©Asmie's Kitchen

 This is a delicious finger licking appetizer for your Iftar. Made with few ingredients that are always available at home. My family and I enjoy it! Whenever you try our recipes, feel free to tag us. We will appreciate it.

Ingredients:

6 Slices of bread

5 plump sliced tomatoes 

1 large diced onion 

1 cup (250ml) tomato sauce 

3 chopped lettuce 

3 chopped cabbage leaves

1 small chopped cucumber 

1 tsp Italian seasoning 

1 tsp Asmie's Kitchen Ground pepper 

1 tsp salt

2 tbsps oil

Method 

Heat some oil in a pan, add the sliced tomatoes, diced onion, salt, Italian seasoning Asmie's Kitchen Ground pepper. Stir now and then till the vegetables are halfway cooked. Remove from the pan. Add to a medium bowl. Add the chopped cabbage leaves, lettuce, diced cucumber and toss to combine. 

 Next, spread the homemade rich tomato sauce on each sliced bread. Add tablespoons of the stir fried tomatoes, onions and other vegetables. Cover with the other sliced bread. Grill till golden brown. Serve with tea and enjoy! © Asmie's Kitchen

Asmie's Yam Balls

Here is an Iftar Appetizer. Loved by many people. Simple, tasty and delicious 👌 

Ingredients:

1/2 small yam 

1- 2 large eggs

1/4 kg minced meat 

1 chopped onion

1 cup (250 ml) ground bell peppers, onions,

Asmie's Kitchen Curry Powder 

Asmie's Kitchen ginger

Asmie's Kitchen Curry Powder 

1-2 stock cubes 

1 tsp thyme in 

Salt to taste

1/2 bottle oil for frying 


Method

Peel yam, slice and boil in some water enough to cook the yam. Cover the pot tightly. When cooked, use a fork to prick it to make sure it's cooked. Remove from the pot and allow to cool. Then pound in a mortar or use a fork to crush it. Set aside.

 Add the minced meat in a pan, stir. Now and then till it turn brown. Season with salt, stock cubes, thyme, Asmie's Kitchen ground pepper, Mixer Spices and Curry Powder. Mix well with your clean hand or wooden spoon to combine. Allow to cook till the water had absorbed and the minced meat is fully cooked.  Remove from the fire and set aside.

   Add the cooked minced meat in the bowl of mashed yam. Add ground red bell peppers, onions, salt, Asmie's Kitchen Curry Powder, Mixed Spices, chopped onions, ground ginger, ground Red bell peppers and onions. Mix and mould into balls. 

Break the egg(s) in a small bowl, season with a little salt and whisk. 

Heat some oil in a pan. Dip each yam Balls in the whisked eggs mixture.  And fry in hot Hot till golden brown. If you want it crunchy, after dipping in whisked eggs, coat in ground breadcrumbs and fry in hot oil. Repeat the process till golden brown. Serve with ketchup and enjoy!©Asmie's Kitchen

Cauliflower Sauce

If you are thinking of what to serve with white rice, spaghetti, macaroni or cous cous try this simple yet delicious Cauliflower Sauce and thank me later. 


 Ingredients:

1 medium cauliflower 

5 plump chopped tomatoes 

2 large diced onions

10 diced red bell peppers 

5 big carrots (peeled & cut into strips)

1 tbsp ginger & garlic paste

Salt to taste

1-2 stock cubes 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Paprika 

1/4 tsp Asmie's Kitchen Curry Powder 

1 tbsp ground fresh curry and oregano leaves 

1 small cooking spoon oil 

  Method 

Wash and cut the cauliflower and boil in some water till halfway cooked, set aside.

Heat some oil in a pan. Add the ginger and garlic paste and saute for 30 seconds. Add the chopped tomatoes, red bell peppers, onions, ground fresh curry and oregano leaves. Stir now and then for 5 minutes. Add boiled cauliflower and carrot strips. Season with Asmie's Kitchen Curry Powder, Paprika, Mixed Spices, salt and stock cubes. Give it a quick stir. Allow to cook for 5 more minutes. Your sauce is ready! Serve with White Rice, Pasta or Cous Cous and enjoy!©Asmie's Kitchen

This is a meatless garden Egg Sauce. Simple yet healthy and delicious. Best served with white rice, boiled yam or potatoes. Served as lunch or dinner.

Ingredients:

4 big garden eggs (washed & cut into equal size)

1/4 cup ground crayfish 

1 large diced onion 

1 medium bowl blended tomatoes, peppers, onions, garlic & fresh curry leaves 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Curry Powder 

3 stock cubes 

1 tsp thyme

1 tsp paprika 

1 tsp salt

1 small cooking spoon oil 


Method 


First, wash and cut your garden eggs into equal sizes, place them in a bowl, and set aside.

Heat some oil in a pan and add a little crushed fennel seeds for aroma. Then pour in your blended tomatoes, red bell peppers, onions, garlic, and fresh curry leaves.

Add ground crayfish, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Curry Powder, thyme, paprika, and crushed stock cubes. Stir everything together and allow it to cook well.

Next, add the garden eggs and stir gently. Pour in a small amount of water and give it a quick stir. Season with salt, then add diced onions.

Cover and allow it to cook for a few minutes until everything is well combined.

Serve with rice and enjoy your delicious Garden Egg Sauce!©Asmie's Kitchen

Egg Fried Yam served with Simple Vegetable Sauce

Egg Fried Yam

Ingredients:

1/2 small yam (peeled, cut into strips)

2 eggs

A pinch of salt 

1/2 bottle of oil for frying 


Method 

Place the yam in a pot and pour some water enough to cook the yam. Cover the pot and allow to cook. When cooked, strain the yam in a strainer. 

Whisk the eggs and sprinkle little amount of salt, very little. Whisk the eggs well.

Place a pan on the fire. Pour the oil with a slice of onion, when hot, coat each cooked yam strip into the whisked eggs and fry in hot oil till golden brown. Repeat the process till you exhaust all the cooked yam strips. Pack in a strainer so that the oil will drain. Set aside.

   For the Sauce:

1/2 small shredded cabbage (washed & strained)

1 small bowl of diced plump tomatoes 

10 pieces of red bell peppers (cut into strips)

3 diced onions

1 tsp thyme

1 tsp Asmie's Kitchen Curry Powder 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp salt

2 stock cubes 

1 small cooking spoon oil 


Method 

Heat some oil in a pan add ginger and garlic paste and saute for 30 seconds. Add the diced tomatoes, peppers, onions, thyme, Asmie's Kitchen Curry Powder, Asmie's Kitchen Mixed Spices, salt and stock cubes. Stir fry now and then till cooked. Add the shredded cabbage and stir. Cook for 5 minutes. Your sauce is ready! Serve with Egg Fried Yam and enjoy! ©Asmie's Kitchen

Simple yet delicious veggies salad. So fresh and healthy. Can also be served alone. Watch video below 👇

Ingredients:

1 sliced cucumber 

4 plump sliced tomatoes 

1 thinly diced onion

Chopped spring onions 

2 boiled eggs

Dressing:

1 tbsp olive oil 

1 tbsp apple vinegar 

1/2  tsp ground black pepper 

1/2 tsp Italian seasoning 

1 tsp salt

1 tsp sugar 


Method 

In a medium glass bowl, add sliced tomatoes, cucumber, onion and chopped spring onions. Toss to combine. Set aside.

  In a small bowl, add the oil, apple vinegar, salt, sugar, ground black pepper and Italian seasoning. Whisk with a fork. Pour the dressing over the salad. Toss to combine. Cut the boiled eggs and gently place over the salad. Serve with food of your choice and enjoy!©Asmie's Kitchen

Party Jollof Rice

 If you’ve been looking for the secret to finger-licking party Jollof rice, you’re in the right place. Make sure you watch this video till the end so you don’t miss any step.

Ingredients:

2 1/2 cups rice

1 satchet of tomato paste 

1 medium bowl blended tomatoes, peppers, onions, garlic and fresh curry leaves 

3 cups vegetable stock or beef/ chicken stock

3 cups water

2 large chopped onions

3 sliced plump tomatoes 

1 tsp Asmie's Kitchen Curry Powder 

3 sliced onions

1 tsp paprika

1 tsp thyme 

1 tsp salt

5 stock cubes 

1/8 tsp fennel seeds

3 1/2 cooking spoons oil

Method 

First, place a pot on medium heat and add some oil. Once the oil is hot, add your chopped onions and fry until they’re soft and almost brown. This step gives the Jollof its rich base.

Next, add one sachet of tomato paste and fry it very well, stirring continuously until the oil separates. This is very important for that deep party Jollof flavour.

Now, season with thyme and fennel seeds and stir everything together.

Pour in your blended mixture of tomatoes, red bell peppers, onions, garlic, and fresh curry leaves. Season with salt, Asmie's Kitchen Curry Powder, paprika, and stock cubes. Stir until everything is well combined.

Add your vegetable broth and a little water—just enough to cook the rice. Cover the pot and allow it to cook gently.

When the rice is almost done, add a few tablespoons of butter. This helps prevent sticking and adds a rich flavour. Cover and allow it to cook for a few more minutes so the butter melts perfectly.

Finally, add sliced tomatoes and onions, cover the pot, and let it cook for about five minutes.
