Crescent Rolls

 
I have flour and thought of what snack to make with it. The idea came to me and I baked these beautiful golden babies. So soft and delicious. I served it with tea at Iftar. My family and I enjoyed it.

  Ingredients:
3 cups flour (sifted/seived)
1 tbsp yeast
1/2 cup margarine
1/3 cup sugar
1/8 tsp salt
1 large egg
1/4 or 1/2 cup milk (dilute powdered milk with some water)
 
   Method
Soak the yeast with half medium 
cup of warm water, add 1 tbsp sugar, stir and allow to proof for 5 minutes.

  Combine the flour, sugar, salt, stir and add margarine. Mix well. Stir in the yeast and milk, mix. Knead to form a soft dough.

  Grease the bowl and place the dough. Cover with a clean kitchen towel and allow to rise for 45 minutes to 1 hour.

  Sprinkle some flour on a board and knead the dough for a minute. Divide the dough into 2. Keep one aside.

  Mould the first dough into ball and roll  with a rolling pin. It should be 10 inches or 12 inches. The shape should be circle. If it's not circle, get a round object and cut it to give you circle shape. Cut into wedges; you can get up to 10 or less than 10 pieces. Fold one after the other into Crescent Rolls. Repeat the process with the remaining dough.

  Place a baking sheet or parchment paper In a baking tray. Rub margarine on the sheet, gently place the crescent rolls on the baking sheet. Cover and allow to double in size for 30 minutes.
 Bake in preheated oven for 10 - 15 minutes or till golden brown. Brush the top with melted margarine. I sprinkled some sesame seeds on top. Serve.

Vegetable Biryani


 
 This is my second attempt of cooking Vegetable Biryani. I love it so the much. The
aroma and the taste is "wow". It's really an irresistible Indian Cuisine. A must try recipe. I just finished cooking it now. I'm waiting for Iftar time. Can't wait to dig in.😍

  Ingredients for Rice:
2 cups rice preferably Basmati Rice
5 cloves
2 bay leaves
4 cardamom

 Vegetables:
3 carrots (peeled & diced)
2 onions (diced & fried till golden brown)
1/2 cup green peas (boiled)
2 cups Potatoes (peeled & diced)
1 cup chopped tomatoes
 3 tbsp mint leaves (chopped)
 3 tbsp curry leaves (chopped)
 1 ground scotch bonnet
1 chilli pepper (cut into strips)

  Other Ingredients:
 1 tbsp ground nutmeg
 1 tbsp ginger & garlic paste
 A dash of ground cardamom seeds
 2 boiled eggs (cut into 2)

         Seasonings
Salt to taste
2 stock cubes

 1 cup oil

  Method
Soak the rice for 30 minutes. Wash several times with clean water. Strain.

  Add 1 tbsp oil or butter in a medium pot. Add the garam masala spices and some water enough to boil the rice. You can use 1 medium bowl of water. Bring to the boil. Pour the rice and stir. Boil till aldante (almost soft) Strain the rice in a strainer and set aside.

 Heat 1/2 the oil in the pot that you boiled the rice. But rinse it first before using. Add 2 cloves, 1 bay leaves, 2 cardamom pods and saute for 30 seconds on low flame. Add the fried onions (but reduce some fried onions for garnishing) add red chilli pepper and fry for a minute. Add the ground ginger- garlic paste, ground scotch bonnet and ground nutmeg and a dash of ground cardamom seeds. Saute for a minute. Add the diced potatoes and fry now and then.

  Tip:
What I did to cook the Potatoes fast was. I covered the pot with it's lid and stir now and then for 5 minutes.

  Add the other vegetables; diced carrots and boiled green peas, stir occasionally for   4 minutes.

    Add the tomatoes, coriander powder, chicken masala powder, salt, stock cubes, turmeric, chopped curry and mint leaves. Stir fry for a minute or two.

   Pour the boiled rice into the pot. In a small bowl, add 1-2 cups water. Squeeze one lime in the water and some salt like 1/2 tsp stir. Pour the water in the pot but at the sides. Stir the rice gently and cook on medium-low flame.
 Garnish with the remaining fried onions and mint leaves.

Basil Fried Rice

Fried rice is a quick fix.I love fried rice so much. I never get tired of eating it. I always create varieties of fried rice recipes. Just scroll down and check this blog, you will come across with so many of them. And any time I come across with fried rice ingredients, I try the recipe. Hope you will love this recipe. Pls if you try my recipes, do send me the pictures.

  Ingredients:
2 cups rice
1 large red bell pepper (cut into thin strips)
1 fresh chilli pepper (cut into thin strips)
1 diced onion
1 cup fresh basil leaves or 1 tsp dried crushed basil
1 tsp crushed garlic
1 tsp crushed fresh ginger
1 tbsp ground curry and mint leaves
1 ground scotch bonnet
1-2 stock cubes
1 tsp soy sauce
1 tsp oyster sauce
3-4 tbsp oil

  Method
Parboil the rice, wash and strain.

  Wash the fresh basil leaves and boil, strain and set aside.

  Heat the oil in a pan. Add the crushed garlic, ginger, scotch bonnet, dried basil (if you are using it) fry for 30 seconds on low heat.

  Add the onions and fry till almost translucent on medium flame. Add in the red bell pepper, chilli pepper and stir fry for 5 minutes on low flame. Add the oyster sauce and soy sauce, season with stock cubes. Stir fry for 2 minutes.
  Add the fresh boiled basil and rice little at a time; stirring till all the ingredients are combined. Reduce the flame to low, cover the pan and allow to cook for 5- 7 minutes.
   You can serve with salad and enjoy!

Asmie's Kitchen Grilled Eggs and Veggies Sandwich

I love sandwich a lot. I never get tired of eating it, grilled or not grilled. I always enjoy it with my tea. There are so many sandwich recipes in my blog. Scroll and check. So, today I decided to make a video  of my favourite sandwich. It's so delicious and I ate it with my family. Feel free to substitute the vegetables with the vegetables of your choice. But the vegetables I used tasted good. If you try this recipe, do let me know and drop your picture. I will share it in my blog and Facebook group and Page. Hope you will enjoy it!

  Ingredients:
8 sliced bread
Mayonnaise
2 boiled eggs (sliced)
1 large red bell pepper (cut into strips)
1 diced onion
1 cup shredded cabbage
Salt to taste
Ground black pepper
Ketchup for dipping

    Method
Wash the eggs and boil. Peel & slice. Set aside.

 Roast the vegetables; cabbage, onion and red bell pepper with some salt & ground black pepper in a pan without oil.

Rub mayonnaise on the sliced bread. Place two sliced bread in a sandwich grill. Add one tbsp of the grilled vegetables. Top with 2-3 sliced boiled eggs. Sprinkle some salt and ground black pepper. Cover with two other sliced bread.
 Grill till golden brown. Serve with the ketchup.

Churros with Chocolate Syrup

This is my second attempt of making churros. It's a very simple snack. So soft and delicious especially when dipped into Chocolate Syrup. And one more thing I like about this snack is, it's light.
   I don't have a big nozzle, so I used the small one. That's why it's not as big as the normal churros, in terms of size. Hope you will try it. Feel free to drop your comments below. Thank you 😊

  Ingredients:
1 cup flour
1 tbsp sugar
1/4 tsp salt
2 eggs
1/4 cup margarine
1/2 vanilla flavour
1 cup water

For coating:
1/2 cup sugar
2-3 tbsp cinnamon

     *Method*
Sift the flour and set aside.

 Combine the sugar, margarine, salt and water in a medium pot and bring to the boil. Stir till the margarine melt. Reduce the flame to low and stir in the flour little at a time. Till free of lumps. Remove from the fire and allow to cool for 3 minutes. Put in a  medium bowl, add eggs and vanilla flavour. Blend with a hand mixer till combined.
  Pour in a piping bag with star nozzle or any nozzle for churros.

  Place a frying pan on the fire. When hot, pipe the mixture in the hot oil batch by batch; don't over crowd the pan. It should be a bit long like it is in the picture. Fry till golden brown. Remove from the pan and strain on a serviette.
 Combine the sugar and cinnamon in a small bowl. Coat the churros in the cinnamon-  with sugar.
Serve with chocolate syrup and enjoy!

Egg Coated Sweet Potato Fries with Baked Beans Sauce


 Ingredients For Egg Coated Potato Fries)
3 sweet potatoes (peeled & cut the Potatoes in rectangular shape, wash & strain)
2 large eggs
1 cup flour
1 tbsp Asmie's ground Pepper)
1 stock cube a dash of salt
1/2 tsp curry
1/2 bottle of oil for frying

         *Method*
In a medium bowl, combine the flour, ground pepper, stock cube, salt & curry.
  Whisk the eggs with some salt in a medium bowl.
  Heat the oil in a pan. Dip the potatoes in the eggs, then coat them in the flour mixture and fry in the hot oil till golden brown. Flip over the other side and fry till golden brown. Pack and strain the oil on a serviette. Repeat the process with the remaining potatoes. Set aside.

  Ingredients For Baked Beans Sauce
1 tin of baked beans
Fried fish (flaked)
1 chopped onion
1 large chopped red bell pepper
1 large chopped green bell pepper
1 ground scotch bonnet
1 stock cube
A dash of salt
A dash of curry

     *Method*
Place a pan on the fire. Add the baked beans, flaked fish, red and green peppers, ground scotch bonnet, stock cube, a dash of salt and curry and just a 1/4 cup of water or less than a 1/4 cup, stir. Cook on low heat for 5-10 minutes.
  Serve with Egg Coated Sweet Potato Fries and enjoy!

Lasagna



This is an old post. I made it 4 years
ago.But thought of sharing it with you all. A member asked of the recipe.
    Ingredients:
8 sheets lasagna
1 cup tomato paste
1 jar ragu White sauce/ bechamel white sauce
1/2 kilo minced meat
1-2 tbsps coriander (chopped)
Crushed garlic
2 tbsp garlic chives/ chopped spring onions
Bell peppers & 1 onion (blended)
Salt to taste
2 stock cubes
Mozzarella Cheese (grated)

METHOD
Place your pot on the fire and pour the tomato paste, allow to boil for some mins. Then add the minced meat, stock cubes & crushed garlic and stir now and then to avoid clumps. Allow to cook for 10-15 mins. Add salt and ground pepper, stir and cook for 2-3 mins. Remove from fire and add chopped coriander leaves, stir set aside.

<Now, let me teach you how to make Bechamel white Sauce if you don't want to buy the ragu white sauce or couldn't get it in the market>^
Bechamel White Sauce: place your pan/ medium pot on the fire. Put in 2-3 tbsps margarine and allow it to melt. Make a paste with flour:  Mix 4-5 tbsps flour with water and make sure there is no lumps. Pour it in the pot, add diluted milk too and stir continuously to avoid lumps. Stir till thick. Then keep the pot down and sprinkle some salt and ground black pepper, stir and set aside. Allow it to cool then add the chives/ chopped onion in the bechamel white sauce and stir.
 Arrangement of Lasagna:
Rub little oil in your four corner baking tin. Then pour some of the meat & tomato paste mixture. Then arrange your lasagna sheets on top of the minced meat& tomato paste. Next, you pour your bechamel white sauce on top of the lasagna sheets. Then you repeat the same process. Pour the remaining minced meat & tomato sauce. Then arrange the lasagna sheets, then pour the remaining bechamel White sauce on top. Then lastly, sprinkle your mozzarella cheese on top and bake in preheated oven for 30-40 mins. Or till golden brown.
 Serve warm and enjoy!!!
