Homemade Boiled Egg Mayonnaise


 Ingredients:

4 boiled eggs 

1/3 cup water 

3 tbsps oil 

1 tsp lemon juice or apple vinegar 

1/4 tsp salt

Method

Place the boiled eggs, water, oil, lemon juice or vinegar and salt in a blender cup. Blend till smooth. 

Spread on a bread to make sandwich or use it in your salad and enjoy!©Asmie's Kitchen

Asmie's Fish Salad


 

This is my go to Salad. If you are thinking of what to make to serve with your rice dish or pasta, try this. You will love it! Try this and thank me later.

Ingredients:

1 fresh fish (cut into medium size, washed and strained)

1 medium bunch of lettuce (washed & shredded)

1 cup (250 ml) shredded cabbage 

4 plump tomatoes (diced)

1 medium cucumber (diced)

1 dices onion 

1/2 cup chopped spring onions 

Dressing:

2 tbsps oil 

1 tbsp Apple Vinegar 

1/8 tsp salt

1/2 tsp sugar

1/8 tsp chilli flakes 


Method 

In a medium bowl, add 1 tsp of ginger garlic paste, 1/2 tsp salt, 1/2 tsp Asmie's Kitchen Curry Powder, 1/2 tsp Asmie's Kitchen Egyptian Spice Mix, 1/2 stock cube & 1/8 tsp ground black pepper. Mix all the ingredients. Add in the fish and rub all over it. Allowto marinate for 15-20 minutes. Then fry the fish in hot oil till crispy. Remove from the oil and drain on a serviette. Allow to cool, cut the fish into medium chunks and set aside.

In a small bowl, add the salad dressing one after the other: Oil, Apple Vinegar, salt, sugar, chilli flakes. Whisk well to combine. Set aside.

In a large mixing bowl, add the lettuce, cabbage, diced tomatoes, cucumber, onions and chopped spring onions. Pour the dressing over the salad and toss to combine. Place the salad in a plate. Arrange the spiced fried fish on top and serve with food of your choice. Enjoy!©Asmie's Kitchen

Porridge (Faten Tsaki)


 Porridge (Faten Tsaki) is a popular food of Zaria. But liked and enjoyed by many people. It's simple to prepare and delicious.. it's very healthy too. Full of vegetables.

Ingredients:

2 cups of maize grits (Tsakin masara)

5 Irish potatoes (peeled & cut into cubes)

1 cooking spoon blended tomatoes, peppers onions, garlic, fresh curry and oregano leaves 

1 small bowl chopped ugu leaves

1 diced onions 

1 handful of chopped spring onions 

4 tbsps ground crayfish 

1/2 cup crushed groundnuts (125 ml measuring cup)

2 stock cubes 

Salt to taste

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tsp Asmie's Kitchen Meat Spice Blend 


Method 


Wash the maize grits (Tsakin masara) thoroughly to remove stones, drain in a strainer and set aside.

Place a pot on fire. Pour some water enough to cook the maize grits (Tsakin masara), add the Irish potatoes, blended tomatoes, peppers, onions, garlic, fresh curry and oregano leaves, salt, stock cubes, Asmie's Kitchen Mixed Spices, Secret of Cooking Spice, Meat spice blend, crushed groundnuts and ground crayfish. Cover the pot and bring to the boil. Pour the drained maize grits and stir for a while. Cover the pot halfway and allow to cook. When the grits is soft, add the chopped ugu leaves, diced onions and chopped spring onions, stir and cook for 5 minutes. Remove from the fire. Your Maize Grits Porridge is ready! Moringa Salad


Moringa known as Zogale in Hausa is a healthy and medicinal vegetable. Used in varieties of food such as salad, soups and dambu. Loved by many people and sold by food vendors on the streets and local restaurants.

Ingredients: 

Fresh Moringa leaves 

3/4 cup of ground groundnut cake (garin kuli kuli)

1 stock cube 

Salt to taste

1 chopped cucumber 

1 chopped onion

Optional but important: Tomatoes 

Method 

Pick the moringa leaves and wash with clean water. Place a pot on fire and add the moringa leaves with some water, not much. Cover the pot and allow to cook till the water dried up. Drain in a strainer.

 In a bowl, add the cooked moringa, groundnut powder, stock cube and some salt. Mix to combine. Add chopped cucumber, tomatoes and onions and enjoy alone or with food of your choice.©Asmie's Kitchen

Fig (Baure) Juice


 

We have a very big fig tree in our garden and it bare lots of fruits. So I decided to make juice with it. It was so refreshing 👌 My family and I enjoyed it. Since from that day, I make juice with it from time to time.

Ingredients:

1 small bowl of Fig (Baure) 

3-4 tbsps sugar

Ice cubes or crushed ice

Method 

Cut the figs with a knife into halves, wash with clean water and put in a blender. Add some water to cover the content. Blend till smooth. Add little amount of water, stir with a spoon and place a cheesecloth in a medium bowl. Pour the blended figs and squeeze out the juice from the fig to get the juice. Discard the chaf and add the sugar inside the fig juice. Stir with a spoon. Pour some ice cubes into glass cups and pour the fig juice. Serve chilled and enjoy!©Asmie's Kitchen

Sugar Coated Tigernuts (Aya Mai Sugar)


 

Sugar Coated Tigernuts known as Aya Mai Sugar in Hausa. It's a local snack eaten anytime of the day be it morning, afternoon or evening. It is sweet and addictive. From the moment you start eating small portion, you won't know when you will exhaust the sugar coated tigernuts. Loved by many people and sold on streets by vendors.  

 It's made with few ingredients such as the dried tigernuts, sugar, flavour and little amount of water. It takes few minutes to make it.

Ingredients:

2 /1 cups of dried tigernuts (Aya)

3/4 cup sugar (almost a cup) use 250 ml that is a cup

1 tbsp powdered flavour

1/2 cup water 

1/8 tsp vanilla flavour

Method 

Remove the stones and dirts from the tigernuts. Sift in a tray to remove excess dirts. Wash thoroughly several times with water to remove more dirts. Strain in a strainer and allow to drain for 5-10 minutes. Spread in a tray and allow to dry. 

  Place a pan or pot on fire. Add the tigernuts and fry for 5 minutes on medium to low flame. Set aside.

 Place the pot back to the fire. Add sugar, water and the liquid vanilla flavour. Stir for a minute and allow to boil. Gradually add the tigernuts and stir till well coated. Then add the powdered tigernuts and stir too. Remove from the fire and pour in a tray. Spread it with a wooden spoon. Allow to cool.

  There you are! Your sugar coated tigernuts is ready! Serve and enjoy!©Asmie's Kitchen

Egg & Cucumber Sauce


 

Ingredients:

3 eggs

1 sliced cucumber (cut into halves)

5 carrots (peeled & cut into strips)

1 cup (250 ml) shredded cabbage 

1 large diced onion 

3 red bell peppers (cut into strips)

1 tsp Asmie's Kitchen Curry Powder 

1 tsp Asmie's Kitchen Homemade Oregano 

1 stock cube 

Salt to taste

1 tsp ground garlic and curry leaves 

3-4 tablespoons oil

 Method 

Heat the oil in a pan. Add the ground fresh curry leaves and garlic. Saute for few seconds. Add the diced onions, red bell peppers and stir fry for 5 minutes. 

Next, add the carrots, stock cube, salt, Asmie's Kitchen Curry Powder and Asmie's Kitchen Homemade Oregano. Stir and cook for 5 minutes. Then add the shredded cabbage and stir. Cook for 2-3 minutes. Break the eggs and whisk, then pour into the sauce. Allow to set for some minutes, stir. Finally, add the diced cucumber. Cover the pot and allow to cook for 5 minutes. Your egg and cucumber sauce is ready! Serve with White Rice and enjoy!©Asmie's Kitchen

Tofu (Awara) Sauce


 A simple, healthy and delicious tofu sauce. Best served with rice as lunch or dinner. Try this and thank me later.

Ingredients:

6 pieces of raw tofu

1 cup (250 ml) blended red bell peppers onion, garlic, fresh curry and oregano leaves 

3 tbsps ground crayfish 

1 stock cube 

Salt to taste 

1/2 tsp Asmie's Kitchen Curry Powder 

1/2 tsp Asmie's Kitchen Paprika 

1 tbsp Asmie's Kitchen Onion Flakes 

1 diced onion

1 cup (250 ml) of chopped ugu leaves 

5 tbsps oil 

Method 

Heat the oil in a pan, add blended red bell peppers, onions, garlic, fresh curry and oregano leaves, crayfish, stock cube, salt, Asmie's Kitchen Curry Powder, Asmie's Kitchen Paprika and Asmie's Kitchen Onion flakes. Stir fry for 3-5 minutes. Pour 1 cup (250 ml) of water. Cover the pan and bring to a light boil. Add the crushed tofu (Awara), stir and cook for 3-5 minutes. Finally, add diced onions and shredded ugu leaves. Cover the pan and allow to cook for 3-5 minutes. Your tofu sauce is ready! Serve with rice and enjoy!©Asmie's Kitchen

Asmie's Spiced Roasted Plantain


 This is not your regular plantain recipe. A simple yet delicious plantain delicacy. A lunch idea. My family and I really enjoyed it. Try this and thank me later.

Ingredients:

Ripe plantains 

1 cup (250ml).grated red bell peppers, garlic, fresh curry, oregano leaves and onions

1/4 tsp Asmie's Kitchen Paprika

1/4 tsp Asmie's Kitchen Oregano 

1/4 tsp salt

1/4 tsp thyme 

3 -4 tbsps oil 

Method 

In a medium bowl, add the grated red bell peppers, onions, garlic, thyme, salt, Asmie's Kitchen Paprika and oregano, fresh curry, leaves and oil. Mix everything together. Set aside.

Peel the plantains and rub the pepper-onion mixture all over the plantains. Preheat your oven to 175oC - 220oc. Place a parchment paper on a baking tray and arrange the plantains on it. Place in the oven and roast for 20-30 minutes. Serve with sauce or fried eggs and enjoy!©Asmie's Kitchen

Asmie's Catfish Stew


 

A simple hearty and delicious fish stew. Best served with White Rice or Pasta. A lunch and dinner idea.

Ingredients: 

Fresh Catfish (remove the intestines, cut and wash)

1 medium bowl blended tomatoes, peppers and onions 

1 tbsp ground ginger, garlic, fresh curry and oregano leaves 

1 diced onion 

1 tsp Asmie's Kitchen Paprika

1 tsp Asmie's Kitchen Curry Powder 

2 stock cubes

Salt to taste (optional)

1 small cooking spoon oil 


Method

Place a pot on fire and pour the blended tomatoes, peppers and onions with a little potash in case the tomatoes are sour. Bring to the boil. Add the fresh cat fish, give it a quick stir. Cook for 5-7 minutes. 

Add the oil, ginger, garlic, fresh curry and oregano leaves with Asmie's Kitchen Paprika, salt, stock cubes and Asmie's Kitchen Curry powder. Give it a quick stir. Stir now and then on medium flame. If it's too thick, you can add some water and stir. Finally add the onions. Cover the pot and cook for 3-5 minutes. Your stew is ready! Serve with white rice or pasta and enjoy!©Asmie's Kitchen

Minced Meat Fried Rice

Ingredients:

2 cups rice 

1/4 kg minced meat 

3 diced carrots 

1/2 cup green peas (boiled)

1 large diced onion 

1 tsp Asmie's Kitchen Curry Powder 

1 tsp thyme 

2 stock cubes 

1 tsp salt 

1/4 cup oil


Method 

Place a pot on fire, add some water enough to parboil the rice. Cover the pot and bring to the boil. Add the rice without washing it, stir and allowed to cook till aldente. Wash and strain. Set aside.

Heat the oil in a pan and a tbsp ginger- garlic paste and the chopped onions. Stir Fry till the onions are almost translucent. Add the minced meat and cook till no longer pink. Add the chopped carrots, thyme, Asmie's Kitchen Curry Powder, salt and stock cubes. Stir now and then till the carrots are halfway cooked. Finally, add the parboiled rice, and stir fry. You can sprinkle some chopped spring onions for more taste and aroma. Cook for 5 minutes. Your minced meat fried rice is ready! Serve with coleslaw or salad and enjoy!©Asmie's Kitchen

Asmie's Zobo Drink


 A simple yet refreshing Zobo Drink. Loved by many and served at home and other occasions. Best served chilled. This is an Eid Drink Inspiration. 


Ingredients: 

6 cups Dried Hibiscus Petals (Zobo leaves)

2 Ginger (crushed)

8 Cloves

2 cups Pineapple peel 

1 Cinnamon stick 

1 cup Pineapple juice 

1 cup Watermelon 

Sugar


Method

To get the juice from pineapple and watermelon:

 Cut pineapple and watermelon into cubes and blend with some water till smooth. Seive and set the juice aside.

Rinse the Zobo leaves with water to remove the dust and dirts. Place in a pot add some water enough to cover the Zobo leaves. Add pineapple peel, cloves, crushed ginger, cinnamon stick. Stir, cover the pot and cook for 15 minutes or till the colour becomes deep red. Use a cheesecloth to strain it. Pour some water over the zobo. Allow to cool. Add the pineapple, watermelon juice and sugar. Stir and refrigerate. Serve chilled.©Asmie's Kitchen

Banana Pancakes


 

Simple yet delicious fluffy banana pancakes. Best served as an appetizer for iftar. My family and I really enjoyed it. Try it and thank me later.

Ingredients:

Flour 1 1/2 cups

2 eggs

2 bananas

2 tbsps sugar

1 cup (250 ml) plus 2 tbsps milk

3 tbsps melted margarine 

2 tbsps baking powder 

1 tsp vanilla flavour 


Method 

Sift flour in a mixing bowl. Add the baking powder, salt and sugar. Mix everything to combine. 

In another bowl. Add the milk, melted margarine, vanilla flavour and eggs. Whisk to combine all the ingredients.

Peel and mash the bananas with a fork. Add to the bowl of the dry ingredients. Mix well. Pour the wet ingredients i.e milk-egg mixture and stir well. The batter should be thick and lumpy. 

Melt 1 tsp oil butter in a pan. Add 1/4 cup of the batter in the pan. Fry till some some spots appear on the pancake. Flip and fry the other side till golden brown too. Repeat the process till you exhaust the remaining batter. Slice some bananas and place on top of the pancakes, drizzle some honey on top and serve alone with tea or juice. Enjoy!©Asmie's Kitchen

Creamy Apple Coleslaw


 A simple yet delicious and healthy salad. Perfect for iftar. Try this recipe and thank me later.

Ingredients:

1 small shredded cabbage 

2 peeled apples (cut into strips)

5 peeled & grated carrots 

1/2 small cup chopped spring onions 


For the Dressing 

5 -6  tbsps mayonnaise 

1/4 cup milk or yogurt 

1 tbsp Apple vinegar 

1-2 tbsps honey 


Method 

Add the shredded cabbage, apple strips, grated carrots and chopped spring onions. Mix everything to combine.

  For dressing:

Mayonnaise, milk or yogurt, honey and. Mix everything together to combine. Pour the dressing over the salad and mix well. Serve with food of your choice and enjoy!©Asmie's Kitchen

Onion Rings


 

Ingredients:

1 large onion 

3 tbsps flour

2 Cups ground bread crumbs

1 tsp Asmie's Kitchen Paprika 

1 tsp ground black pepper 

1 tsp Asmie's Kitchen Ground Garlic 

1 tsp chilli flakes 

1 tsp thyme

1 tsp salt

1/2 bottle oil 


Method

Sift the flour in a mixing bowl. Add the ground black pepper, chilli flakes, salt, thyme, Asmie's Kitchen paprika and garlic. Pour some water to give you a thin paste. Mix well with a whisk till free of lumps. Set aside. 

Wash and slice the onion into thick slices. Separate them from one another. 

Coat the onion rings one after the other into the flour paste. Coat in the ground bread crumbs and fry in hot oil till golden brown and crispy. Flip and fry the other side till crispy and golden too. Place on a serviette to drain the excess oil. 

Serve with a mixture of mayonnaise and ketchup. You can also serve with jollof rice. Enjoy!©Asmie's Kitchen

 A simple yet delicious hearty meal. This is a quick fix and an Iftar Inspiration. Try this and thank me later.


Ingredients:

20 pieces of plump tomatoes (washed & cut into cubes)

3 red bell peppers (washed, deseeded & cut into cubes)

1 large diced onion 

2 large eggs

1 tsp paprika 

1 tsp ground black pepper 

1 -2 stock cubes

1 tsp salt to taste

1 tsp crushed garlic 

5 tbsps oil 

Method 

Heat the oil in a pan. Add the diced onions and crushed garlic. Stir fry till aldente. Add the chopped red bell peppers, tomatoes, salt, stock cubes, paprika and stir now and then till the tomatoes are cooked. Pour 1/2 cup (125 ml cup) of water and stir. Cook for two minutes. Make two holes inside the tomato sauce and add break the eggs in the holes. Cover the pan and cook for 4-5 minutes. Your Shakshuka is ready! Serve with Garlic Toasted Sliced Bread and enjoy!©Asmie's Kitchen 

For the Garlic Toasted Sliced Bread

Ingredients:

4 sliced bread

4 pieces of big garlic (crushed)

1 tbsp chopped parsley

3 tbsps of mayonnaise 


Method 

Add the mayonnaise, crushed garlic and chopped parsley in a small bowl. Mix everything together to combine. Spread on each of the sliced bread and toast in the oven or pan till brown and crispy. Serve with Shakshuka and enjoy!©Asmie's Kitchen

Asmie's Fresh Avocado Toast Delight 🥑

 


Ingredients:

1 big avocado 

2 plump sliced tomatoes 

1 small diced onion 

1 tbsp lemon juice 

Pinch salt 

1/2 tsp chilli flakes or ground black pepper

Chopped mint leaves 


Method

Wash and cut avocado into two. Remove the seed. Scoop the flesh and put in a small bowl, add lemon juice, salt, chilli flakes and mix well. Set aside.

Slice bread, it should be thick slices. Apply butter on each slice bread (optional). Toast it in a pan or in the oven till crispy. Apply the avocado mix on top of each slice bread. Arrange the tomato slices, diced onion sprinkle some salt and chilli flakes. Serve and enjoy! ©Asmie's Kitchen

Asmie's Crispy Spiced Yam Delight


This is not your regular fried yam. It's a crispy spiced yam delight. Crispy and delicious 👌 Served for Iftar. Get a cup of tea and enjoy this yam delight. Tried and trusted. You will crave for more. My family and I really enjoyed it. 

  Ingredients: 

1 small yam (peeled, sliced & cut into half)

1 cup (250 ml measuring cup) grated or blended red bell peppers & onions 

1 tsp paprika

1 tsp garlic paste 

1 tsp ginger paste

1 tsp thyme

1 tsp ground fresh curry and oregano leaves 

1 crushed stock cube

Pinch of salt 

1/2 bottle oil

Method

In a large bowl, blended or grated red bell peppers onions, garlic and ginger paste, thyme, paprika, ground oregano and curry leaves, crushed stock cube, little amount of salt and tablespoons of oil. Mix everything together to combine. Add the sliced yam and mix well. Each yam should be coated well with the sauce. 

  Heat some oil in a pan. Fry the yam in batches till golden and crispy. Repeat the process with the remaining spiced yam. 

Serve with tomato sauce or ketchup and salad. Enjoy!©Asmie's Kitchen

Asmie's French Toast


 A simple yet delicious dessert, perfect for Iftar. Made with few ingredients always available in our homes such as bread, milk, sugar, eggs and few drops of vanilla flavour. Try this delicious dessert and thank me later. Feel free to use fruits of your choice i.e banana, apples, berries, etc.

Ingredients:

5 slices of bread

2 large eggs 

1/2 cup milk (125 ml measuring cup)

1 tbsp sugar

A little drop of vanilla flavour 

A pinch of ground cinnamon 

3 tbsps butter 

1 1/2 tsps

Method 

In a mixing bowl, break the eggs, add the milk, sugar, vanilla flavour and a dash of ground cinnamon. Whisk well to combine. 

  Heat 1 tbsp of butter and 1/2 tsp of oil in a pan. Dip a slice of bread into the egg-milk mixture for 20 seconds and flip the other side for same seconds. Remove from the egg- milk mixture Fry in the butter-oil till golden brown. Flip the other side and fry till golden brown too. Repeat the same process with the remaining slices of bread. When the melted butter and oil has finished. Quickly add another 1 tbsp butter and 1/2 tsp oil in the pan and continue frying the toast. 

  Serve with honey, grapes and dust some icing sugar on top. Enjoy!©Asmie's Kitchen

Asmie's Special Egg & Veggie Salad


 A perfect salad for Iftar. Simple, healthy and delicious. A salad every family will enjoy. Pair with food of your choice i.e jollof rice, cous cous, spaghetti, macaroni, fried potatoes and so on. My family and I really enjoyed this salad. And craved for more.

Ingredients:

1 small tin baked beans 

3 large eggs (boiled & cut each into 4)

1 small shredded cabbage (washed & strain)

3 big carrots (peeled & cut into strips)

3 big plump diced tomatoes 

1 chopped onion 

Pieces of shredded lettuce (washed and strained)

2 tbsps ketchup 

1 stock cube

Method 

In a bowl, add the shredded cabbage, lettuce, diced tomatoes, onion, carrots, baked beans, eggs, ketchup and stock cubes. Mix to combine. Put in the fridge to chill. Serve with food of your choice.©Asmie's Kitchen
