Asmie's Fish Sauce

 Thinking of what to cook for lunch or dinner? Here Isa simple yet delicious fish sauce. Can be served with white rice, pasta or cous cous.

Ingredients:

1 medium bowl diced red bell peppers, onions and tomatoes 

1 big sliced fresh fish

1/8 cup ground crayfish 

1 tsp Asmie's Kitchen Curry Powder 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Egyptian Spice Mix 

2 stock cubes 

Salt to taste 

1 tbsp ground garlic, fresh curry and oregano leaves 

1 small cooking spoon oil for the sauce

1 cup oil for frying fish


Method

In a small bowl, add the fish, 1/2 stock cube, 1 tsp Asmie's Kitchen Mixed Spices, 1 tsp thyme, 1 tsp ground All Spice, 1 tsp Asmie's Kitchen Egyptian Spice Mix, 1 tsp Asmie's Kitchen Ground Pepper, some salt, 1 tbsp crushed fresh curry leaves, oregano, garlic and little amount of oil. Mix gently, cover and set aside to marinate for an hour.

  Heat 1 cup oil in a pan, fry the marinated fish in batches. Remove from the pan and set aside.

 Heat the 1 small cooking spoon oil, add 1 tbsp ground garlic, curry and oregano leaves and saute for 30 seconds. Add the diced red bell peppers, onions and tomatoes. Season with salt, stock cubes, ground crayfish, Asmie's Kitchen Curry Powder and Asmie's Kitchen Mixed Spices. Stir and cook for 5 more minutes. Add the fried fish and chopped spring onions. Cover and cook for 5 minutes. Your sauce is ready! Serve warm with white rice and enjoy! ©Asmie's Kitchen

Asmie's Cocoa Yam Soup

Looking for something quick to cook and delicious for lunch or dinner? Here it is, Cocoa Yam Soup made simple. My family and I enjoy it! Try it and thank me later.


Ingredients:

5 pieces of Cocoa yam (gwaza)

1/4 kg beef

1/2 cup ground crayfish 

A handful of chopped ugu leaves 

1/4 cup palm oil

2 stock cubes

Salt to taste

Locust Bean (Daddawa) optional 

1 tsp Asmie's Kitchen Mixed Spices 

Method 

Wash and cook cocoa yam till soft. Remove from the fire. Remove the cocoa yam and allow to cool. Peel it and pound in a mortar (turmi) till soft and free of lumps. Set aside 

Wash and boil the meat with some salt, onions and locust bean (daddawa) if using, till the meat is tender. Add the ground crayfish, palm oil, stock cubes, salt, Asmie's Kitchen Mixed Spices and the mashed cocoa yam. Stir and allow to cook for 5 minutes. Finally, add the chopped ugu leaves, stir and cook for 5 more minutes. Remove from the fire and serve with swallow of your choice. ©Asmie's Kitchen

Ogbonno Soup

 I love Ogbono Soup. It's one of my favorite native soup. My family loves it too. It's a healthy and delicious soup. We serve it with swallow of our choice. This time around I served it with Eba. My family and I enjoyed it. Below is the recipe hope you will try it and enjoy it too just like I did.


Ingredients:
1/2 small cup ground Ogbonno
1/2 kilo beef
Stock fish
Pieces of kpomo(scraped and washed)
1/2 small cup ground crayfish
2-3 dry fish(de-boned and washed )
1/2 bunch chopped ugu
1 large diced onion
1 tsp ground pepper
1 small cup palm oil
Salt to taste
3 bouillon cubes

Method
Wash and boil the beef with kpomo, when almost tender, add the stock fish, chopped onions, stock cubes and Asmie's Kitchen Ground Pepper, stir. Add crayfish and dry fish. Let it boil for some time. Pour the ogbonno in a small bowl and add enough palm oil,  stir it for some time. Take some of the stock from the  beef root and to the Ogbonno.  Stir it till it melts.  Pour it to the  beef pot and stir.  Add your ugu leaves, allow it to boil. Serve with semovita or tuwo shinkafa, Eba or any swallow of your choice and enjoy!

Ingredients

Popcorn kernels

A little cooking oil

Sugar

Milk powder


Method

1. Buy your popcorn kernels.

2. Pour a small amount of oil into a pot.

3. Put the pot on the fire and add the popcorn kernels.

4. Stir gently.

5. Reduce the heat to low.

6. Cover the pot with a lid.

7. You will hear the kernels popping.

8. When the popping sound stops, turn off the heat.

9. Add sugar and mix well.

10. Add milk powder and mix again.

That’s it—your popcorn is ready!

Today, we’re making Liver Fried Rice — flavorful, colorful, and delicious!

Ingredients: 

2 cups of washed rice 

1/4 kg cooked chopped liver

5 big peeled and diced carrots 

1 large chopped onion 

1 (250 ml) cup of chopped green beans

1 small tin sweet corn 

1 tbsp ground garlic, fresh curry leaves and oregano 

I tsp thyme

2 stock cubes 

Salt to taste 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tsp Asmie's Kitchen Curry Powder 

1 medium cooking spoon oil

2 Sliced green chillies

2 Sliced Orange chillies


Method 

Start by adding 2 cups of washed rice into a pot, then pour enough water to cook it.

Next, add your liver stock for that rich, meaty flavor.

Season with Asmie's Kitchen Curry Powder, a teaspoon of salt, thyme, and a stock cube.

Stir gently, cover the pot, and allow it to cook until the rice is soft and fluffy. Then set it aside.

Now, in another pot, heat some vegetable oil.

Add diced onions, ground garlic, fresh curry leaves, and a touch of oregano.

Stir-fry for about three minutes until it smells amazing.

Add diced carrots, green beans, sweet corn, and your cooked chopped liver.

Season with 2 stock cubes, Asmie's Kitchen Mixed Spices, Asmie's Secret of Cooking Spice, and a little salt.

Finally, add your cooked rice, some sliced green and orange chili peppers, and stir well.

Let it cook for five minutes so all the flavors blend perfectly.

And there you have it — your delicious Liver Fried Rice is ready to serve! 😍

Ingredients:

2 cups of washed rice

1 small bowl of blended tomatoes, peppers onions & crayfish 

2 sliced onions 

1 tbsp thyme

1 tbsp ground fresh curry, oregano leaves, all spice & garlic 

1 sliced onion

1 tsp to 1 tbsp paprika

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tbsp Asmie's Onion Flakes

1 tsp Asmie's Kitchen Everyday Spice Blend 

3 stock cubes 

Salt to taste

1 medium cooking spoons oil

Method 

Heat some oil in a pan. Add ground fresh curry, oregano leaves, all spice, garlic and one sliced onion, fry till the onions are translucent. Pour the blended tomatoes, peppers, onions and crayfish. Stir now and then till fried. Add the washed rice, stock cubes, salt, paprika, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, Asmie's Kitchen Onion Flakes, thyme, Asmie's Kitchen Everyday Spice and pour enough water to cook it. Stir and cover the pot with a foil paper and then with the lid of the pot (that's the cover). Cook on medium flame. When it's almost cooked, the liquid is almost absorbed, add sliced onions. Cover the pot and cook for 5 minutes. Your Jollof Rice is ready! Serve with salad, Peppered Meat, fish, chicken or alone and enjoy!©Asmie's Kitchen

 Today's Tip is on a tasty and aromatic local spice: Locust Beans Spice Mix. Otherwise Known as Daddawa Spice Mix for Soups and dishes.

In a non stick pan, add Cloves (kanimfari), dried ginger, dried chilli pepper, black pepper and toast for 3-5 minutes on low flame. Put in a blender with chopped dried spring onions, crayfish and dried locust beans (Daddawa). Blend to powder. Store in an air tight container and keep in a kitchen cupboard for use.©Asmie's Kitchen

 A simple yet delicious sauce cooked with it ingredients that are mostly available at home with the exception of shrimps. I served with Fried Sweet Potatoes. It was so delicious and irresistible. It can be served with Rice, Pasta, Yam,Cous Cous,etc.

Ingredients:

1 medium bowl blended peppers, onions, garlic, crayfish fresh curry and oregano leaves

1 cup (250 ml cup) of dry shrimps

3 tbsps small cup crayfish 

3  peeled and diced carrots 

1 big diced onion

1/2 small shredded cabbage 

1 tsp Asmie's Kitchen dried oregano 

1 tsp Asmie's Kitchen Egyptian Spice Mix 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 stock cube

Salt to taste

2 scoops (ludayi) oil


Method 

Soak dry shrimps in hot water for 10 minutes to soften. Drain in a strainer and set aside.

Place a medium pot on fire and pour the blended peppers, onions, crayfish, garlic fresh curry, oregano leaves and shrimps. Stir and allow to cook till the liquid has reduced. Add oil, stock cubes, Asmie's Kitchen Meat Spice Blend, Asmie's Kitchen Egyptian Spice Mix, Salt to taste, Asmie's Kitchen homemade dried oregano, stir fry now and then till oil appear on top of the sauce. Now, add the washed shredded cabbage, carrots and onion. Stir and cook for 5 minutes. Your Shrimp Sauce is ready! Serve with White Rice, Potatoes, Pasta, Yam, etc and enjoy! ©Asmie's Kitchen

 This is a simple yet delicious lunch Inspiration. You can wow your guests with it. Can be served with white rice, pasta, potatoes, yam or cous cous.

Ingredients:

1 small shredded cabbage 

1 medium bowl blended tomatoes, peppers, onions, crayfish,garlic fresh curry and oregano leaves 

5 peeled and diced carrots 

1 large diced onion

1 tsp Asmie's Kitchen Curry Powder 

2 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 tsp Asmie's Kitchen Egyptian Spice Mix 

2 stock cubes 

Salt to taste (optional)

2 medium scoops (ludayi) of oil 


Method 

Place a medium pot on the fire and pour the blended tomatoes, peppers, onions, garlic, crayfish, fresh curry and oregano leaves with a pinch of potash in case the tomatoes are sour. Bring to the boil. Add oil, stock cubes, salt, Asmie's Kitchen Curry Powder, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Meat Spice Blend, Asmie's Kitchen Egyptian Spice Mix and stir now and then till cooked and oil appeared on top. Finally, add the shredded cabbage, carrots and onion. Stir and cook for 5 minutes. Your cabbage soup is ready! Serve with White rice, pasta, potatoes or yam and enjoy!©Asmie's Kitchen

6 pieces of raw tofu (Awara) crushed 

1 cup (250ml) dry shrimps

Cooked Chicken parts 

1 medium bowl blended tomatoes, peppers onions, garlic, fresh curry and oregano leaves 

4 tbsps ground crayfish 

1 bunch of chopped ugu leaves 

1 large diced onions 

1 tsp Asmie's Kitchen Curry Powder

2-3 stock cubes

Method 

Soak dry shrimps in warm water for 10 minutes to soften. Strain and set aside.

Place a medium pot on fire. Add the blended tomatoes, peppers, onions, garlic, fresh curry and oregano leaves with a little potash (kanwa) incase the tomatoes are sour. Bring to the boil, add crushed tofu, shrimps, cooked chicken parts, ground crayfish, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Curry Powder, Asmie's Kitchen Meat Spice Blend, Asmie's Kitchen Egyptian Spice Mix, salt, stock cubes and palm oil. Stir and allow to cook till thick. Finally, add the chopped ugu leaves, diced onions and stir. Cool for 5 minutes. Your Tofu Vegetable Soup is ready! Serve warm with swallow of your choice. Ingredients:

Fresh fleshy chicken parts

4 chopped carrots 

1 small tin sweet corn 

1 big chopped onion

1 handful of chopped spring onions 

3 chopped red bell peppers 

2 stock cubes 

Salt to taste

1 tbsp crushed garlic 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tsp Asmie's Kitchen Curry Powder 

Ground black pepper 

2 tbsps corn flour paste (mix corn flour with little amount of water)


Method 

Place a medium pot on fire, add fleshy chicken parts, small amount of chopped spring onions, some salt and some water enough to cook the chicken. 

  After the chicken has been cooked, remove from the broth. Allow to cool, shred the chicken with a  knife. Add to the pot that contains the chicken broth, add chopped carrots, sweet corn, chopped red bell peppers, onions, garlic, Asmie's Kitchen Meat Spice Blend, Asmie's Kitchen Secret of Cooking Spice, Asmie's Kitchen Curry Powder, ground black pepper, salt to taste and stock cubes. Stir and allow to cook. 

  Finally, make a paste of corn flour and some water. Add to the pot with some chopped spring onions, stir and cook for 5 minutes. Your chicken soup is ready! Serve warm and enjoy!©Asmie's Kitchen

Shrimp Fried Rice

 Ingredients:

2 cups rice

1 cup dry shrimps (250ml)

1/2 cup diced carrots 

1 big diced onion

1/2 cup green peas

1 tbsp Asmie's Kitchen Curry Powder 

1 tsp Asmie's Kitchen Egyptian Spice Mix 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 tbsp ground fresh garlic, fresh curry leaves fresh oregano 

2 stock cubes 

2 scoops (ludayi) oil

Salt to taste

Pieces of chopped fresh curry leaves for garnishing 

Soak the shrimps in warm water for 8-10 minutes. Strain in a strainer and pour some little amount of water over it. Set aside

Place a pan on the fire, add the shrimp in the pan without adding oil and roast for 3 minutes on medium flame. Remove the pan from the fire and set aside.

Place a pot on the fire, add the oil with ground garlic, fresh curry and oregano leaves. Saute for 30 seconds. Add the onions and fry till almost translucent. Add the carrots, chopped fresh chilli peppers, boiled peas, salt, stock cubes, Asmie's Kitchen Curry Powder, Asmie's Kitchen Meat Spice Blend, Asmie's Kitchen Egyptian Spice Mix. Stir fry for 5 minutes. Add the shrimp stir and cook for 5 minutes. Lastly, add the parboiled rice and stir to combine. Cover the pot and allow to cook for 5 more minutes.  A simple yet exquisite Herbed Chicken Tomato Sauce. Served with Rice, Pasta, Yam, Potatoes and so on. Served as lunch or dinner.

Ingredients:

Cooked Chicken Parts

1 medium bowl blended tomatoes, peppers, onions garlic, crayfish, fresh curry and oregano leaves 

1 big diced onion

4 diced carrots 

2 handfuls of chopped ugu leaves 

1 tsp Asmie's Kitchen Egyptian Spice Mix 

1 tsp Paprika 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 tsp Asmie's Kitchen Mixed Spices 

2 stock cubes 

Salt to taste 

1 small scoop (ludayi ) of oil


Method 

Heat some oil in a medium pan. Add the blended tomatoes, peppers, onions, garlic, crayfish, fresh curry and oregano leaves and the cooked chicken with little broth, season with salt, stock cubes, Asmie's Kitchen Egyptian Spice Mix, paprika, Asmie's Kitchen Mixed Spices and Spice Blend. Stir fry now and and then till cooked. 

Add the diced onions, carrots and stir. Cook for 5 minutes. Finally, add the chopped ugu leaves, stir and cook for 3-5 minutes. Your Herbed Chicken Tomato Sauce is ready! Serve with food of your choice and enjoy!©Asmie's Kitchen

Fried Herb Potatoes with Chicken Sauce

Fried Herb Potatoes 

Ingredients:

30 pieces of Irish potatoes (peeled and cut into strips)

1 tbsp Italian seasoning 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 tbsp ground black pepper 

1 tsp chili flakes 

1 tbsp thyme 

1/2 tsp Asmie's Egyptian Spice Mix 

1 tsp Asmie's Kitchen Ground Pepper 

1 tsp salt

1/ 2 bottle oil for frying 


Sprinkle some salt on the potatoes and toss to combine. Heat the oil in a pan and fry the potatoes in batches till cooked. It shouldn't be crispy. Pack from the pan, drain the potatoes in a strainer so that the oil will drain. Set aside.

In a small bowl, add all the spices: Italian seasoning, thyme, salt, Asmie's Kitchen Egyptian Spice Mix, Asmie's Kitchen Meat Spice Blend, Asmie's Kitchen Ground Pepper, ground black pepper, and chilli flakes and mix with a fork or spoon to combine. 

  Reduce the oil in an iron bowl and leave little oil in the pan. Add the fried potatoes back to the pan and add the spices. Stir to combine. Cover the pan cook on low flame for 3-5 minutes. Stir the potatoes again and cook for another 3-5 minutes. Remove from the fire put in a plate.


For the Chicken Sauce

Ingredients: 

Chicken parts of your choice

1 medium bowl of blended tomatoes, peppers onions, garlic, fresh curry and oregano leaves 

4 diced tomatoes 

3 diced red bell peppers

2 big diced onions 

2 stock cubes 

Salt to taste 

1 tsp Asmie's Kitchen Egyptian Spice Mix 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 tsp Paprika 

1 tsp ground coriander 

1 small scoop (ludayi) of oil 


Method 

In a medium pot, wash and add the chicken parts, salt to taste, a stock cube, crushed garlic, crushed fresh curry and oregano leaves with diced onions and some water enough to cook the chicken. Allow to cook till tender, leave little broth. Remove from the fire and set aside.

Place a pan on fire, add heat some oil, add the blended tomatoes peppers onions, garlic, fresh curry and oregano leaves and stir. Bring to the boil, add the diced tomatoes, peppers and onions, season with paprika, salt, 2 stock cubes, Asmie's Kitchen Egyptian Spice Mix, Asmie's Kitchen Meat Spice Blend, Asmie's Kitchen Ground Pepper and ground coriander. Add the chicken parts and the broth, stir and cook for 5 more minutes. Your chicken sauce is ready! Serve with Herb Potatoes and enjoy!©Asmie's Kitchen

1 medium bowl chopped garden eggs (20 pieces)

Chicken parts

In another medium pot,  heat some oil in the pot. Add the blended tomatoes, peppers onions, garlic, crayfish, fresh curry and oregano leaves and fry for 5 minutes. 

Add the chopped tomatoes, onions, salt, stock cubes, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, Asmie's Kitchen Meat Spice Blend, Paprika and stir fry now and then. Add the cooked chicken parts with the broth and stir. Cook for 5 minutes. Finally, add the chopped spring onions and chopped ugu leaves. Stir and cook for 5 more minutes. Maize Grits Porridge with Potatoes (Faten Tsaki)

Ingredients:

2 cups of maize grits (Tsakin masara)

5 Irish potatoes (peeled & cut into cubes)

1 cooking spoon blended tomatoes, peppers onions, garlic, fresh curry and oregano leaves 

1 small bowl chopped ugu leaves

1 diced onions 

1 handful of chopped spring onions 

4 tbsps ground crayfish 

1/2 cup crushed groundnuts (125 ml measuring cup)

2 stock cubes 

Salt to taste

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tsp Asmie's Kitchen Meat Spice Blend 


Method 

Wash the maize grits (Tsakin masara) thoroughly to remove stones, drain in a strainer and set aside.

Place a pot on fire. Pour some water enough to cook the maize grits (Tsakin masara), add the Irish potatoes, blended tomatoes, peppers, onions, garlic, fresh curry and oregano leaves, salt, stock cubes, Asmie's Kitchen Mixed Spices, Secret of Cooking Spice, Meat spice blend, crushed groundnuts and ground crayfish. Cover the pot and bring to the boil. Pour the drained maize grits and stir for a while. Cover the pot halfway and allow to cook. When the grits is soft, add the chopped ugu leaves, diced onions and chopped spring onions, stir and cook for 5 minutes. Remove from the fire. Your Maize Grits Porridge is ready! Pieces of shredded lettuce

3 Boiled beetroot (cut into strips)

5 Carrots (cut into strips)

1 Cucumber (cut into strips)

1 cup chopped spring onions

1 diced onion

A handful of mint leaves 


Dressing:

2 tbsps olive oil

1 tbsp Apple vinegar 

1/2 tsp salt 

1 tsp salt

1 tsp ground black pepper 

1 tsp Asmie's Italian seasoning 

1 tsp Asmie's Kitchen Ground Pepper 


Method 

In a bowl, add the shredded lettuce, beetroot, carrots, chopped spring onions, onions, mint leaves. And set aside.

  In a small bowl, add the olive oil, apple vinegar, salt, sugar, Italian seasoning, ground black pepper and Asmie's Kitchen Italian seasoning. Stir with a spoon to combine. Pour over the dressing and toss to combine. Serve with food of your choice and enjoy! ©Asmie's Kitchen

 This is a simple yet delicious stew. Best served with Rice, Yam, Potatoes or pasta. You can wow your guest with this stew. 

Ingredients:

1/4 kg biscuit bones 

1 medium bowl blended tomatoes, peppers, onions, garlic, fresh curry and oregano leaves 

1 diced onions 

1 handful chopped spring onions 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Meat Spice Blend 

1 tsp Ground Coriander 

1/2 tsp Ground cardamom 

1 tsp Paprika 

2 Stock cubes 

1 tsp Salt to taste 

1/2 small cooking spoon oil 


Method 

In a small pot, add washed biscuit bones with some salt, thyme, crushed garlic and ground fresh curry, oregano leaves and some water enough to cook the bones. Stir and allow to cook. Remove the biscuit bones from the stock (that's the liquid) and set aside.

Place a pot on the fire and pour the blended tomatoes, peppers, onions, garlic, fresh curry and oregano leaves with a little potash incase the tomato is sour. Bring to the boil, when the liquid has almost absorbed. Now, add the cooked biscuit bones, Asmie's Kitchen Secret of Cooking Spice, Mixed Spices, Meat Spice Blend, paprika, ground coriander, ground cardamom, stock cubes, salt, stock from cooked bones and oil. Stir fry now and then till the stew is fried, you see notice oil appear in the soup. Add diced onions and chopped spring onions. Cook for 5 minutes. Remove from the fire.  Here is an easy yet delicious scrambled Tofu sandwich. It's a quick fix and can also be served as brunch. Even if you are not a fan of tofu you will love this. Serve with tea or juice and enjoy!

Ingredients:

6 slices of bread 

Raw (Awara) Tofu 6 pieces 

1 large diced onion 

1 handful of chopped spring onions 

2 plump tomatoes (diced)

2 red bell peppers (tattasai)

1/2 tsp Asmie's Kitchen Mixed Spices 

1/2 tsp Asmie's Kitchen Curry Powder 

1/2 tsp Asmie's Kitchen Secret of Cooking Spice 

1 stock cube 

1/2 cup of oil

Method 

Scramble the raw tofu in a bowl and set aside.

Heat some oil in a pan and fry the scrambled tofu till brown. Pack from the pan and set aside.

Next, add little oil in a pan. add the red bell peppers, tomatoes, onions, chopped spring onions,  Asmie's Kitchen Curry Powder, Mixed Spices, Secret of Cooking Spice, stock cube and stir fry till halfway cooked. Remove from the pan and set aside.

 In the same pan, add little oil add the scrambled fried tofu, fried vegetables and stir. Cook for 5 minutes. Remove from the pan. 

Heat your grill or sandwich maker. Add spoons of the stir fried scrambled eggs and vegetables on a slice of bread. Cover with another slice of bread. Repeat the same process. Arrange on the preheated grill and grill till brown. Cut to desired size and serve with tea or juice and enjoy!©Asmie's Kitchen

1 big fried fish (deboned and cut into medium size pieces) (round fish: gammo in Hausa)

1 medium cooking spoon oil

A little potash 

Method 

Place a medium pot on the fire. Add the blended tomatoes, peppers onions, etc in the pot with a little potash. Bring to the boil, add the oil and deboned fish with salt, stock cubes, Asmie's Kitchen Curry powder, Mixed Spices and Secret of Cooking Spice. Stir fry now and then till the stew is fried. Spanish Tortilla

Ingredients:

5 large eggs

5 medium Irish potatoes (peeled & diced)

1/2 tsp salt 

1/2 tsp ground black pepper 

1 cup of Oil for frying (250 ml, equivalent to 1 small tin of milk)


Method 

Heat the oil in a pan. Add the diced potatoes and fry till halfway cooked. Add the diced onions and fry till almost tender. Remove from the pan, drain the oil in a strainer to remove the excess oil. 

  Crack 5 eggs in a bowl, season with salt and ground black pepper. Whisk well and add the potato-onion mix. Whisk again. 

Heat a little oil in a pan, add the potato-onion-egg mix and let it set. Place a plate over the pan, carefully flip the tortilla, slide it back into the pan, and cook the other side until golden.

2 cups of macaroni 

Shredded cooked chicken 

6 grated carrots 

1 large diced onion 

5 diced tomatoes 

1 small cup chopped spring onions 

5-6 tbsps Mayonnaise 

1 tbsp vinegar 

1 tsp Asmie's Kitchen Ground Pepper 

1 tsp salt

1 tsp sugar

A dash of ground black pepper 


Method 

Parboil macaroni in a pot of water till aldante, strain in a strainer, pour some water over it and set aside. 

  In a small bowl, add the mayonnaise, apple vinegar, salt, sugar and Asmie's Kitchen Ground Pepper. Stir to combine. 

  In a large bowl, add the macaroni, shredded cooked chicken, grated carrots, onions, tomatoes and chopped spring onions. Pour over the mayonnaise dressing in the macaroni and vegetables. Stir to combine. Serve and enjoy as a whole meal or with food of your choice.©Asmie's Kitchen

Asmie's Garden Egg Sauce

Ingredients:

1 medium bowl diced garden eggs 

1/4 cup ground crayfish 

1 medium bowl blended peppers, onions, garlic, fresh curry and oregano leaves 

1 diced onions 

1 satchet tomato paste 

1 small bowl chopped onions 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp salt to taste 

3 stock cubes 

1 small cooking spoon oil 

  Method 

Heat the oil in a medium pot. Add the blended tomatoes, peppers onions, garlic, fresh curry and oregano leaves. Stir fry for 5 minutes. Add tomato paste, ground crayfish, 250 ml cup of water, a dash of potash or baking powder due to the sour taste of the tomato  paste, stock cubes, salt, Asmie's Kitchen Secret of Cooking Spice and Asmie's Kitchen Mixed Spices. Stir and allow to cook for 10 minutes. Add the diced garden eggs and stir. Cook till halfway cooked. Finally, add the chopped spring onions and onions. Cover with a lid and allow to cook for 5 minutes. Serve warm with white rice or food of your choice and enjoy.©Asmie's Kitchen

1 medium bowl Cocoayam ( peeled & cut into medium size)

3-4 tbsps ground crayfish 

1 large diced onion 

1-2 handfuls of shredded ugu leaves or spinach 

1 medium cooking spoon blended tomatoes, peppers, onions, garlic, ginger, fresh curry and oregano leaves 

1/2 small cooking spoon palm oil 

1 tsp Asmie's Kitchen Curry powder 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tsp Asmie's Kitchen Ground Pepper 

1 tsp Asmie's Kitchen Mixed Spices 

3 stock cubes 

Salt to taste 

Method 

In a medium cooking pot, add the diced Cocoayam, blended tomatoes, peppers, onions, garlic, ginger, fresh curry and oregano leaves, stock cubes, salt, Asmie's Kitchen Curry powder, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, Asmie's Kitchen Ground Pepper, ground crayfish, palm oil and some water to cook the Cocoayam. Stir and cover the pot. Cook till tender. Lastly, add the shredded ugu leaves and onions. Cover the pot and cook for 5 minutes. Serve warm and enjoy!©Asmie's Kitchen

Ingredients:

Boiled cassava (cut into medium size) Feel free to use raw cassava

Chopped ugu leaves (spinach can also be used)

1 medium cooking spoon blended tomatoes, peppers and onions, garlic, ginger fresh curry and oregano leaves 

1 diced onion

3-4 tbsps ground crayfish 

1/2 small cooking spoon palm oil or oil

1 tsp Asmie's Kitchen Ground Pepper 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Curry Powder 

2 stock cubes 

Salt to taste

Method 

Place a pot on the fire. Add the cooked or raw cassava, palm oil, ground crayfish, blended tomatoes, peppers, onions, garlic, ginger, fresh curry and oregano leaves, stock cubes, Asmie's Kitchen Curry Powder, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Ground Pepper, salt and some water enough to cook it. Stir, cover and bring to the boil. 

When almost cooked add the chopped and washed ugu leaves, diced onions. Cover the pot and cook till it's fully cooked. Serve a bit watery and enjoy!©Asmie's Kitchen

Bitterleaf Soup with a Twist

Bitterleaf is known as Shuwaka in Hausa. It's a green vegetable used in soups and other dishes.

This is a simple, healthy and delicious recipe. Best served as lunch and dinner.

Ingredients:

A bunch of washed and squeezed Bitterleaf (Shuwaka)

6 pieces of raw tofu (Awara) crushed

Pieces of fresh fish (you can use fried os smoked fish)

1 cup groundnut (grinded) (250ml cup, equivalent to 1 small tin of milk)

1 small bowl blended peppers and onions 

1 satchet tomato paste

3-4 tbsps ground crayfish 

3 stock cubes 

Salt (optional)

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Ground Pepper 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 -2 tbsps ginger and garlic paste 

1 tbsp ground fresh curry and oregano leaves 

1 medium cooking spoon palm oil

Method 

Place a pot on fire and add the tomato paste, blended peppers, onions, garlic ginger paste, fresh curry and oregano leaves with a little potash incase if the tomato paste is sour and some water. Stir and bring to the boil.

 Add Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, Asmie's Kitchen Ground Pepper, stock cubes, salt, fish, crayfish, groundnuts and palm oil. Stir and cook for 10-15 minutes. 

Add the crushed fresh tofu, stir and cook for 5 more minutes. Finally, add the washed and squeezed bitterleaf. Give it a quick stir and cook on low flame. Serve warm with corn meal or swallow of your choice and enjoy! © Asmie's Kitchen

3-4 tbsps ground crayfish 

1 large diced onion

1 small bowl blended or grated peppers, ginger, garlic, fresh curry leaves, fresh oregano leaves and onions

2 stock cubes 

Salt to taste (optional)

1 tsp Asmie's Kitchen ground Pepper 

1 tsp Asmie's Kitchen Mixed Spices

1/2 small cooking spoon or 5 tbsps of oil

Method 

Heat the oil in a pan. Add the ground crayfish, blended peppers, onions, garlic, ginger, fresh curry, oregano leaves and onions. Season with stock cubes and Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice and Asmie's Kitchen Ground Pepper. Stir now and then till cooked. 

Add the diced garden eggs and cook till halfway cooked. Feel free to add little amount of water if you want. Finally, add the chopped green ugu leaves and cook on low flame till cooked. Serve warm and enjoy with white rice, potatoes, yam or spaghetti.©Asmie's Kitchen

 This is a simple yet hearty and delicious chicken and vegetable delicacy. Can be served as lunch or dinner with white rice, pasta, or by itself. Can also be served as an appetizer.

Ingredients:

 Pieces of chicken parts 

3 big carrots (peeled & cut into match stick)

1 big diced onion 

Chopped spring onions 

1 medium cooking spoon blended peppers, onions, garlic, ginger, fresh curry and oregano leaves 

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

2 stock cubes 

Salt to taste

3 tbsps oil


Method 

Place a pot on the fire. Add the washed chicken parts, blended peppers, onions, garlic, ginger, fresh curry and oregano leaves, stock cubes, salt, oil and some water to cook the chicken. This is a simple, healthy and delicious snack to wow your guests or serve as a snack alone or with tea, juice, etc 

Ingredients:

1 loaf of bread (sliced)

Chicken parts (the fleshy part like thighs, etc)

1/2 cup chopped spring onions 

1 chopped onion

2 chopped green bell peppers 

2 chopped red bell peppers 

4-5 tbsps Mayonnaise 

1 tbsp salt 

1 tbsp ground black pepper 

1 tsp ground black pepper 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tsp Asmie's Kitchen Ground Pepper 

1 tsp Asmie's Kitchen Ground Ginger 

1 tsp crushed garlic 

3 crushed cloves 

2 tbsps chopped fresh curry and oregano leaves 


Method 

Place a pot on the fire, add the chicken parts, stock cube, salt, Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, Asmie's Kitchen Ground Pepper, Asmie's Kitchen Ground Ginger, 3 crushed cloves, 3 pieces crushed garlic, 2 tbsps chopped fresh curry and oregano leaves and 2 cups of water (use measuring cup 250 ml). Stir cover the pot and allow to cook till tender. Remove from the fire, allow to cool. Shred the chicken and put in a bowl. Add the chopped red bell peppers, green bell peppers, chopped onions, spring onions, 1/4 tsp salt, 1 tsp ground black pepper, 1/2 tsp Italian seasoning, mayonnaise and mix all to combine. Add spoonful of the chicken mixture on slice of bread, cover with another slice. Put in a preheated grill and grill till golden brown. Serve alone or with Tea, Juice and enjoy!© Asmie's Kitchen

Ingredients:

Dry fish (de-boned)

5 tbsps blended or grated peppers, onion, garlic, fresh curry and oregano leaves 

1 tbsp chopped scent leaves 

1 diced onion 

1 tsp Asmie's Kitchen Curry Powder 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1 tbsp chopped scent leaves 

1 stock cube

Salt to taste 

Method 

How to get the fish liquid/water:

Remove the bones from the fish. Rinse the fish with water and put in a bowl. Add some water. Let it sit for 5-7 minutes. Then strain the water from the dry fish.

Place a pot on fire. Add the fish, fish liquid/water enough to cook the fish, diced onion, ground or blended peppers, onions, garlic fresh curry and oregano leaves, stock cube, salt and Asmie's Kitchen Curry Powder, Mixed Spices and Secret of Cooking Spice. Stir, cover the pot and allow to cook for 10-15 minutes on medium flame. When the fish is cooked, add the scent leaves, stir and cook for 3-5 minutes. Ingredients:

4 ripe mangoes (washed)

1 cup milk 

3 ripe bananas 

1/4 tsp Asmie's Kitchen Ground Ginger 

2 tbsps honey

  Method 

Cut the mangoes and remove the flesh with a knife. Put in a blender, add the banana, milk, honey, ginger and blend till smooth. Refrigerate and serve chilled. You can blend with some ice cubes and serve immediately.©Asmie's Kitchen

Ingredients:

1/2 pack Cous Cous 

1 large diced onion 

5 carrots (peeled & diced)

1/2 cup boiled green peas

2 medium cooking spoons blended red bell peppers, onions, garlic, fresh curry fresh oregano leaves 

1 chopped red bell pepper (tattasai)

2 tbsps ground crayfish 

2 stock cubes 

A dash of salt

1 tsp Asmie's Kitchen Curry powder 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

1/2 medium cooking spoon oil

  Method 

Get a clean bowl, pour the cous cous. Drizzle 1 1/2 tbsps oil. Mix well with a fork. Add 1 cup of warm water (use 250ml measuring cup). Use a fork to fluff the cous cous. Cover with a lid and allow to sit for 5-10 minutes.

Heat some oil in a pot. Add the blended red bell peppers onions, garlic, fresh curry and oregano leaves. Stir and cook for 5 minutes. Add the diced carrots, red bell peppers, onions, boiled peas, ground crayfish, Asmie's Kitchen Curry powder, Mixed spices, Secret of Cooking Spice, salt and stock cubes. Stir and cook for 5 more minutes. Stir in the cous cous, cover the pot and cook on low flame till the vegetables are cooked or cook for 5 minutes. 8 garden eggs (yalo)

1 medium bowl blended red bell peppers, onions, tomatoes, garlic, fresh curry and oregano leaves 

Pieces of Dry fish 

1 medium cooking spoon oil

3 tbsps ground crayfish 

4 stock cubes 

1 tsp salt

1 small potash

1 tsp Asmie's Kitchen Curry powder 

1 tsp Asmie's Kitchen Mixed Spices 

1 tsp Asmie's Kitchen Secret of Cooking Spice 

Method 

Wash the garden eggs, cut into cubes and blend with some water in the blender. Set aside.

Soak the dry fish in water for 5-10 minutes. Strain and set aside.

 Heat the oil in a pot and add the blended tomatoes, red bell peppers, onions, garlic, fresh curry and oregano leaves with a little potash because of tomatoes to prevent it from being sour. Bring to the boil till the liquid from the vegetables (tomatoes, onions, etc) is almost absorbed. Now, add the dry fish, crayfish, Asmie Kitchen Curry Powder, Mixed Spices, Secret of Cooking Spice, salt and stock cubes. Stir and cook for 5 minutes. Add the blended garden eggs and stir. Cook for 5 to 10 minutes or till thick. Serve with Boiled yam, White Rice, Potatoes, etc and enjoy!© Asmie's Kitchen
