This is a simple yet healthy and delicious soup. Prepared with green herbs and vegetables. Very aromatic. The soup can be paired with white rice or food of your choice. Ingredients:
3 cups fresh chopped spring onions, mint leaves, fresh curry leaves, fresh oregano, diced onions
1 tbsp chopped fresh ginger and garlic
Chicken parts
1 diced onion
1/4 tsp Asmie's Kitchen Mixed Spices
1/4 tsp Asmie's Kitchen Secret of Cooking Spice
1/2 tsp salt
2 stock cubes
1 tsp cloves, black pepper, cumin seeds and cardamom pods
1/2 medium cooking spoon oil
Method
Blend the fresh vegetables i.e spring onions, mint leaves, fresh curry leaves, fresh oregano, onions, garlic and ginger with 1 cup (250 ml) or half cup of water.
Heat some oil in a pot. Sautè cloves, pieces of black pepper, cardamom pods and cumin seeds for 10 seconds. Add the chicken parts and stir fry now and then for 5 minutes.
Pour the blended vegetables i.e spring onions mint leaves, etc into the pot. Season with Asmie's Kitchen Mixed Spices, Asmie's Kitchen Secret of Cooking Spice, salt and stock cubes. Stir, cover the pot and allow to cook for 5-7 minutes. Add the diced onions and stir. Cook for 3-5 minutes on low flame.
(1/2 tsp salt, 1/2 tsp thyme, 2 crushed garlic for boiling the liver)
Method
Place a pot on the fire and add the liver strips. Pour some water to almost cover the content. Sprinkle some salt, a little bit of ground garlic and a dash of thyme. Cook till halfway cooked. Strain and set aside.

This is a unique method of Cooking Jollof Rice. When you are tired of cooking it the regular way, cook it this way by baking it in the oven. You will enjoy it.
INGREDIENTS:
2 cups of rice (250ml cups)
3 tbsps tomato paste
1 small cup of green peas
2 carrots (peeled & diced)
1 large onion (diced)
1 small cup of oil
1 satchet thyme
1 satchet onga (stew)
3 stock cubes
1 tbsp salt
1 tbsp ground white pepper
1 tbsp crushed ginger
METHOD
Place a medium pot of water on the fire and allow to boil. Add the rice and parbboil for 5-10 minutes.Wash and strain the rice. Put a foil paper in a baking pan. Add the ingredients in the pan covered with foil paper. Stir well. Cover the top with a piece of foil paper. Bake in a preheated oven for 1 hour. After 1 hour, remove from the oven. Jollof Rice (Oven Baked) is ready. Serve alone or with Peppered chicken, meat, salad and enjoy! (c)Asmie's Kitchen

A simple yet delicious grilled Sandwich. This is for sandwich lovers. If you love sandwich, this is for you. I really enjoyed it. And that sauce was delicious. The aroma was very nice.

Ingredients:
6 slices of bread
3 large eggs
1 cucumber (sliced)
3-4 plump tomatoes
2 pieces of fresh lettuce
1 handful of chopped spring onions
1/8 tsp chilli flakes
1/8 tsp salt
Tomato sauce Ingredients:
Blended plump tomatoes
1/4 tsp Italian seasoning
1/4 tsp salt
1/4 tsp ground coriander
1/4 tsp ground black pepper
6 tbsps oil
Method
Pour the blended tomatoes with a dash of baking powder in a pot and bring to the boil. The use of baking powder is to remove the sour from the tomatoes. Add the oil, salt, ground black pepper, ground coriander, Italian seasoning and stir. Cook on medium to low flame. Set aside.
Grilled Sandwich
Break the 3 eggs in a bowl. Season with salt and chilli flakes. Add the chopped spring onions. Whisk and set aside.
Preheat a grill, brush some oil in the grill and pour the whisked eggs. Cover and allow to cook for 2-3 minutes. Remove gently from the grill and set aside. Cut into two.
Rub some of the tomato sauce on a slice of bread. Place one of the grilled eggs on top of the sauce. Take the second slice of bread and rub the tomato sauce. Place it on top of the egg. Place a lettuce on top of it. Arrange sliced tomatoes and cucumber. Feel free to add any vegetables of your choice. Rub some of the tomato sauce on the third slice of bread and cover and vegetables.

Method
Cut the yam into medium size and peel. If the yam is thick, slice each yam into two. So that it will easily be cooked. Wash in clean water. Place a pot on the fire and pour some water enough to cook the yam. Cover and allow to cook.
As the yam is cooking, break the eggs in a medium bowl. Add the ground nutmeg, Asmie's Kitchen curry powder, Asmie's Kitchen Mixed Spices, salt, shredded cabbage, carrots and whisk well.

Chicken thighs
2 large red bell peppers (cut into strips)
2 large green bell peppers (cut into strips)
2 diced onions
2 tsp ground black pepper
Salt to taste
2 stock cubes or soy sauce
2 tbsps Corn flour
1/2 cup water (use measuring cup)
1/8 tsp salt
1 tsp sugar
1/2 cup Oil
Method
In a medium bowl, add the chicken thighs, 1 tbsp corn flour, 1 stock cube or 1 tbsp soy sauce, 1 tbsp water. Mix and set aside.
For the Sauce:
In a medium bowl, add 1/2 cup water 1 stock cube or 1 tbsp soy sauce, 1 tbsp corn flour, 2 tsps ground black pepper and 1 tbsp sugar and 1/8 tsp salt. Stir to combine.
Heat the oil in a pan and fry the chicken thighs in batches, flip and fry the other side. It should be 80% cooked. Remove from the pan and set the chicken aside.
