Carrot Sauce

 This is a simple yet delicious side dish made with grated Vegetables such as carrots and red bell peppers. Proteins such as meat, chicken, fish or tofu can be used. Serve with white rice or pasta and enjoy!

Ingredients:

3 large carrots (washed & grated)

4 large red bell peppers (tattasai) grated

2 chopped onions 

2 chopped spring onions 

Fried or grilled fish (optional)

1 stock cube

Salt to taste 

1 tsp Asmie's Kitchen curry powder 

1 tsp Asmie's Kitchen Mixed Spices 

1/4 tsp ground fennel seeds 

5 tbsps oil 

Method 

Heat the oil in a pan and add the chopped red bell peppers, onions and spring onions with salt, stock cube and spices. Stir till halfway cooked. Add the grated carrots and fish if using, stir. Cook for 5-7 minutes on low flame. Serve with white rice and enjoy!© Asmie's Kitchen

Stir Fried Cabbage Sauce with Fried Egg

 A simple yet delicious lunch Inspiration. Serve with White Rice or Pasta and enjoy!

Ingredients:

1 small shredded cabbage 

1 tsp ginger and garlic paste

Pieces of chopped green beans 

1 diced onion 

1 stock cube

Salt to taste

1 tsp Asmie's Creative Curry Powder  

1 tsp Asmie's Kitchen Mixed Spices 

4 tbsps cooking spoon oil 

Cabbage Sauce: 

Method 

Heat 4 tbsps of oil in a pan. Add ginger and garlic paste. Fry for some seconds. Add shredded cabbage, pieces of green beans,  diced onion, seasonings and spices. Stir fry till the veggies are almost soft. 

  Fried Egg

Break one egg in a small bowl. Heat a non stick pan with 1 tsp oil. Gently add the egg, sprinkle little maggi and pinch curry. Cover and fry on low heat. Allow to set. Serve with rice and fried egg. (c) Asmie's Kitchen

  This is a simple yet delicious meatless sauce. Serve as lunch with White Rice, Yam or Potatoes. 


Ingredients:

1 small bowl blended garden Eggs (yalo)

1 small bowl blended tomatoes, Peppers & onions

2 handfuls of chopped washed spinach 

1 diced onion 

1 tbsp ground garlic & fresh curry leaves 

5 tbsps ground crayfish 

2-3 stock cubes 

Salt to taste

1 medium cooking spoon oil 

Method 

Heat the oil in a medium pot. Add the blended tomatoes, red bell peppers, onions, ground garlic, fresh curry leaves and crayfish. Fry for 7-10 minutes on medium flame. Add the blended garden eggs, Asmie's Kitchen Curry Powder, Asmie's Kitchen Mixed Spices, stock cubes and salt, stir. Cook for 7-10 minutes. Finally, add the chopped spinach and diced onion. Ingredients:
1 small shredded cabbage 
6 peeled carrots (cut into match stick)
3 eggs
1 handful of chopped spring onions
1 chopped onions 
2 stock cubes 
1 tsp salt
1 tsp Asmie's Kitchen Curry Powder 
1 tsp Asmie's Kitchen Mixed Spices 
1/2 cooking spoon oil 

Method 

Whisk the eggs in a bowl with 1/4 tsp salt and 1/4 tsp ground black pepper. Heat some oil in a pan and fry the eggs. Stir fry to scramble. Remove the pan from the fire, pack the scrambled eggs and set aside.

Heat some oil in a pan and fry the chopped onions. Add the chopped carrots, stir fry for few minutes. Add the cabbage, spices, salt and stock cubes. Stir to combine. Add the scrambled eggs and chopped spring onions and stir. Cook for 5 minutes on low flame. Serve with rice, pasta or cous cous and enjoy!©Asmie's Kitchen

Chicken & Vegetable Soup

 This is a simple, hearty and delicious soup good for this weather. It can also be served as a whole meal. Or with a crusty bread. 

Ingredients:

Fresh chicken parts

2 medium diced potatoes 

5 peeled diced carrots 

1 diced onion

1 tbsp ground fresh garlic & fresh curry leaves 

1 tbsp chopped fresh scent leaves

Asmie's Kitchen Curry Powder 

Asmie's Kitchen Mixed Spices 

Asmie's Kitchen Jollof Rice Spice (for some reddish colour)

2-3 stock cubes 

1 tsp salt

Method 

Place a pot of fire. Add the chicken parts, diced potatoes, carrots, ground fresh garlic and curry leaves, salt, stock cubes, Asmie's Kitchen Curry powder, Mixed Spices and Jollof Rice Spice for some reddish colour. Pour water to almost cover the content. Cover and bring to the boil. Add chopped onions, cover the pot and allow to cook for 3- 5 minutes. Add chopped scent leaves and cool for 2 minutes. Chicken Nihari

Chicken Nihari is an Indian Stew. Beef and lamb can also be used to make this stew. It's a stew thickened with wheat slurry. It is simple yet healthy and delicious chicken delicacy. It is served with flat bread i.e naan or roti. Served as brunch (breakfast and lunch).

Note: there is no stock cubes in Nihari chicken, but as a Nigerian we can't cook without stock cubes, so I added it. But Nihari Masala contains salt. The stock cube is totally optional. 

Ingredients:

Fresh Chicken thighs 

1 tbsp Nihari Masala 

1 tbsp crushed garlic 

2 diced onions 

2-3 tbsps wheat slurry

2 medium cooking spoons Oil

2 stock cubes 

Method 

Heat 1 cooking spoon oil in a pan and fry the diced onions till lightly brown. Remove from the fire and set aside. 

Heat 1 cooking spoon oil in a medium pot. Add the crushed garlic and saute for 30 seconds. Add the chicken thighs and stir. Allow to cook for 3-5 minutes on low to medium flame. Add the Nihari Masala, stock cubes and stir. Pour some water to cover or almost cover the chicken. Cover the pot and bring to the boil. Make a slurry with 1 tbsp wheat flour and 2-3 tbsps water. Add to the pot and stir. Cover and cook for 5 more minutes. Add the fried onions, stir, cover the pot and allow to cook on medium flame. Serve with flat bread and enjoy!©Asmie's Kitchen

Garden Egg Stew with Chicken is a delicious and healthy stew. And easy to cook. Can be served with potatoes, yam or white rice especially for those that love garden eggs. It's a must try recipe. Ingredients:

2 large garden eggs (cut into cubes & blend)

2 cups blended red bell peppers, onion, spring onions garlic, mint & curry leaves

Chicken parts (boiled)

1 diced onion

1 cup chopped spring onions

1 cup chopped ugu leaves

1 cooking spoon oil

5 stock cubes

1 tsp Asmie's Kitchen Ground Pepper

1 tsp Asmie's Kitchen Egyptian Spice Mix

1 tbsp Asmie's Kitchen Curry Powder

Few pieces of Fennel seeds

Few pieces of Cumin seeds


 Method

Heat the oil in a medium pot. Sprinkle cumin and fennel seeds. Allow to splutter for few seconds. Add the blended red bell peppers, onions, garlic, spring onions, curry and mint leaves. Season with seasoning and spices. Stir now and then till fried. Add the blended garden eggs and stir occasionally till fried. Add the chicken parts and stir gently in order not to break the fish. Allow to cook for 5 minutes. Add the diced onion and spring onions. Stir and cook for 5 minutes. Finally, add the chopped ugu leaves and stir gently. Cook on low flame for 5 minutes. Wheat Doughnuts (Doughnuts din Alkama)

   Wheat Doughnuts

Ingredients:

2 small cups wheat flour

1 tbsp yeast

4 tbsp margarine

2 tbsp sugar

1 egg

Pinch salt

2 tbsp dry milk powder


METHOD

 Soak the yeast in warm water.

Pour the flour in a deep medium bowl, add the salt, sugar, dry milk, raw egg and mix. Add the margarine and yeast, mix. Add warm water and knead to form a soft dough. Cover and allow to rest for 10 mins. Then sprinkle some wheat flour or corn flour on a chopping board. Knead and roll flat with a rolling pin. Use your doughnut cutter to cut out your doughnuts and set them aside on a floured surface. Keep the doughnuts covered with a light kitchen towel. Wheat Akara Fritters (Kosan Alkama)

This is a simple yet healthy and delicious breakfast made with wheat known as Alkama in Hausa. It requires only few ingredients. It's served with tea, pap (Koko) or with  ground pepper (yaji). 

Wheat Akàra

Ingredients:

2 cups wheat

1 tbsp baking powder

4 eggs

Salt & 1 stock cube

3 chopped bell peppers

1 large chopped onion

Oil for deep frying


METHOD

Seive flour in à medium rubber/ bowl. Add baking powder and salt, mix and add the eggs(you can whisk before adding it in the bowl of flour.) Add chopped bell peppers and onions. Mix all together and add some water, stir. It's thickness should be like akara mixture.

 Heat your oil in a frying pan, scoop the wheat mixture using a medium cooking spoon and fry it in the hot oil. Serve with tea, with pepper or alone.©Asmie's Kitchen

Steamed Wheat Grits (Dambun Alkama)

 Ingredients:

2 cups wheat grits (Tsaki Alkama)

1 cup blended or ground red bell peppers, onions, garlic, fresh curry leaves

1 or 1 1/2 cups chopped ugu leaves

1/2 cup crushed groundnut 

1/4 cup oil

2 stock cubes

1 tsp salt

Method 

Sieve the wheat grits (Tsaki Alkama) to remove the powder. Put the grits in a big bowl and sprinkle some water to soak it. Don't add much water, just some water to wet the grits. Place a medium pot on fire. Pour some water in the pot. It shouldn't touch the edge of the iron strainer, to avoid the grits from being soaked. The water should be quarter of the pot. 

Place an iron strainer on top of the pot. Pour the wheat grits. Cover with a white paper, or clean sack or nylon and finally place the cover of the pot or bigger cover to cover the pot. Cook till soft.  Stir it once in a while and sprinkle some water to soften it. When soft, remove from the fire.

   Pour in a big bowl, add the blended red bell peppers, onions, garlic and fresh curry leaves, crushed groundnuts, stock cubes, salt, chopped ugu leaves and some little oil. Mix all together and pour back into the iron strainer. 

  Check if the water in the pot is not much, add little amount of water. Place the iron strainer back on top of the pot. Cover with the nylon and then with the lid (cover). Cook till the leaves are cooked. Removed from the fire. Pour the Dambun Alkama in a bowl. Fry some oil with a slice of onion till golden brown. Remove the onion. Pour the oil in the bowl of Dambun Alkama. Taste for salt and maggi. Toss or stir to combine.

Serve in a plate with salad or peppered meat, fish, gas meat, fried fish, etc and enjoy! © Asmie's kitchen

Ingredients:

1 pack noodles 

Noodles seasoning

2 eggs 

3 peeled diced carrots 

3 diced red bell peppers 

1/4 cup chopped green beans 

1 diced onion

1/2 cup chopped ugu leaves/ spinach

1/2  cooking spoon oil

  Method

Place a pot of water on fire. Bring to the boil. Make sure the pot is covered. Add the noodles, cover the pot again and parboil. Strain and set aside. Reserve the noodle water.

  Heat 3-4 tbsps of Oil in a pan. Whisk the eggs with a pinch of salt and pour into the pan. Allow to set then stir-fry to scramble. Pack from the pan and set aside.

   In the same pan, add the remaining oil. Add the chopped onions and carrots and stir fry till halfway cooked. Add the red bell peppers, green beans, ugu leaves/spinach, ground crayfish, noodles seasoning, Asmie's Kitchen Curry Powder, Mixed Spices and Ground Pepper. Pour the noodle water and stir. Cook for 5 minutes. Add the scrambled eggs and the parboiled noodles and stir. Cook for 2-3 minutes. Serve warm and enjoy!©Asmie's Kitchen

Turmeric Rice with Liver Sauce

This is a simple healthy and hearty lunch. Can also be served as dinner with some salad 🥗 

 Ingredients:
1 cup of rice
1 tsp turmeric powder 

Method 
Place a pot of water on fire and bring to the boil. Add the rice stir and parboil. Wash and strain, set aside. Rinse the pot with some water and place it back on fire. Add some water enough to cook the rice. Add the turmeric powder, cover the pot and bring to the boil. Add the rice and stir, cover the cook till the rice is done. Remove from the fire and set aside.
  
LIVER SAUCE 
Ingredients:
1/4 kg liver (cut into strips)
3 large red bell peppers (cut into chunks)
3 large green bell peppers (cut into chunks)
1 large onion (cut into chunks)
1 tsp Asmie's Kitchen curry powder 
1 tsp Asmie's Kitchen Mixed Spices 
1 tbsp ginger and garlic paste
2 stock cubes 
1 medium cooking spoon oil Oil

Method
Heat some oil in a pan and fry the liver. If the oil is much, reduce it before adding the red bell peppers, green bell peppers, onions, stock cubes, curry powder, mixed spices and ginger garlic paste. Stir and cook on medium flame till the veggies are halfway cooked. Serve with Turmeric Rice and enjoy! ©Asmie's Kitchen

Ingredients:

12 potatoes (Irish)

1/2 tsp paprika powder 

1/2 tsp Asmie's Kitchen ground pepper 

1/2 tsp Asmie's Kitchen Mixed Spices 

1/2 tsp Asmie's Kitchen Ground ginger 

1 tsp Italian seasoning 

1 1/2 tsp salt

2 tbsps of Oil 

Method 

Peel the potatoes and cut into desired size. Put in a bowl of water. Strain and set aside.

  Brush a baking tray with some oil and add the potatoes.  Season with all the spices and salt and finally drizzle some oil. Toss to combine all the ingredients.  Roast in the oven for about an hour or an hour. Serve with salad and enjoy!© Asmie's Kitchen

Kpomo Pepper Soup

This is a simple yet delicious pepper soup that can be served with Kpomo Pepper Soup or Sauce. 
  Ingredients
8 Kanda/kpomo scraped & washed
4 carrots( scraped and cut vertically)
3 green peppers ( cut into strips)
2 large sliced onions
Blended Bell peppers, 1 hot pepper, and 1 small onion
Pinch of nutmeg
1/4 tsp thyme
1/3 ginger powder
Few crushed garlic
Few black pepper
Salt and Maggi
Method
Add the kanda/ kpomo in a pot and put on the fire.
Add enough water to cook it. Sprinkle the black pepper and thyme. Cook till almost tender. Then add the blended veggies, carrots, green pepper, spices and seasonings. Stir, cover the pot, reduce the heat, and allow to cook gently. Serve with bowl-shaped rice and stew. Garnish with lettuce and diced cucumber. (C)Asmie's Kitchen

Ingredients:

Raw Tofu (20 pieces)

4 carrots(peeled & diced)

1 large onion (diced)

3 red bell peppers (cut into strips)

A handful of ugu leaves (washed & cut)

1/2 tsp ground black pepper

1/2 tsp chilli flakes

1 stock cube 

1 tbsp ketchup 

2 tbsps corn flour 

1 cup oil for frying 

 Method 

Heat the oil in a pan and fry the tofu till golden brown. Pack from the oil and put on a serviette to drain the oil. Set aside.

   Heat 1/4 cup of oil in another pan and fry the diced onions and carrots till halfway cooked. Add red bell peppers and stir. Cook for 3 minutes. Add the fried tofu, Asmie's Kitchen curry powder, Asmie's Kitchen Mixed Spices and stir fry for few minutes. 

   Mix the corn flour with 1 1/2 cups of water. Add the the ketchup and stir. Pour in the pan. Season with ground black pepper, chilli flakes and coriander with some salt to taste. Stir, cover the pot and cook on low flame for 5 minutes.©Asmie's Kitchen

Ugu Leaves Salad

This is a simple, delicious and healthy salad. Known as ugu leaves salad. The leaves is also called Ugu, Hospital too far, Chaya leaves and kafi likita in Hausa. The leaves are also medicinal.  Feel free to add vegetables of your choice.

 Ingredients: 

Ugu leaves (washed and strained)

2 chopped tomatoes 

1 chopped onion 

1/2 Cucumber (optional)

1/2 cup groundnut cake (ground) (kuli)

1/2 to 1 stock cube 

Method 

Boil the ugu leaves and strain. You can use your hand to squeeze the water out of the leaves. 

Cut the ugu leaves into desired size. And put in a bowl. Add the chopped onions, tomatoes, stock cube and groundnut cake (kuli kuli). Mix or toss to combine. Serve alone or as a side dish with rice, pasta, etc and enjoy!©Asmie's Kitchen

Veggies Sauce

 This is a simple, healthy and delicious sauce. Can be served with white rice or pasta. You can also cook this for your guests, they will surely love it. 

   In place of red bell peppers. I substituted it with chilli flakes. As we all know her in Nigeria, vegetables (tomatoes, peppers & onions) are expensive. Feel free to increase the quantity of the chilli flakes if you like it more spicy.

Ingredients: 

1 small cabbage (shredded & washed in salty water)

3 plump tomatoes (diced)

2 medium diced onions

 This is a quick fix. Easy and delicious rice dish. I named it "Curry Rice" because I used curry powder and fresh curry leaves. It is prepared with few ingredients.

Ingredients:

1 cup rice (washed & strained)

1/2 cup peeled & chopped carrots 

2 chopped onions

3 tbsps chopped fresh curry leaves 

1 tsp chopped garlic 

2 stock cubes 

1/4 salt  

1/8 tsp ground black pepper 

1 tsp Asmie's Kitchen Curry Powder 

3 tbsps raisins (soaked in water for 30 minutes)

1 cooking spoon oil 

  Method 

Heat some oil in a pan and fry half of the chopped onion till translucent. Add the washed rice and cook on low flame for 10 minutes. Set aside.

  Place a medium pot on fire and pour some water enough to cook 1 cup of rice. Add chopped onion, carrots, ground black pepper, salt, stock cubes, Asmie's Kitchen Curry Powder. Cover the pot and bring to the boil. Stir in the rice. Cover and cook till halfway cooked. Open the pot and cover the top of the pot with foil paper. Place the lid of the pot on top of the foil paper and cook till the liquid is absorbed. Add the chopped curry leaves and the soaked raisins and stir. Serve warm and enjoy! © Asmie's Kitchen

1 cup minced cooked meat

1/8 tsp ground fennel

Method 

Heat some oil in a pan, add onions and cook till halfway cooked. Add the blended tomatoes peppers onions garlic and fresh curry leaves. Season with stock cubes, ground all spice, ground black pepper, fennel and Asmie's Kitchen Curry Powder. Stir and allow to cook. 

   Add the stock and cooked minced meat, you can use fresh minced meat. Stir and cook for 5 minutes. Lastly, add chopped spring onions, stir and cook for 2-3 minutes. Serve with rice or Spaghetti and enjoy © Asmie's Kitchen

Tofu Salad with Cucumber

Ingredients:

10 pieces of large raw tofu (sold at 50 naira per one piece from tofu sellers)

1 large cucumber (cut into strips)

5 peeled carrots (cut into strips)

1 diced onion 

6 plump cherry tomatoes (diced)

1/4 cup fresh mint leaves (washed)

For the dressing:

2 tbsps oil (preferably olive oil) but you can use any oil of your choice 

1 tbsp apple vinegar 

1 tsp honey 

1/4 tsp salt

1/8 tsp ground black pepper 


Method 

Slice each raw tofu into 2 or 3 pieces vertically and fry in hot oil till golden brown. Flip over and fry the other side till golden brown too. Pack from the oil and put on a serviette to drain the oil form the fried tofu. Repeat the same process till you exhaust the raw tofu. Cut each fried tofu into 3 pieces horizontally.Set aside.

   For the Salad dressing: 

In a small bowl, add the olive oil, apple vinegar, honey, salt and ground black pepper. Whisk to combine and set aside.

  In a large bowl, add the cucumber, carrots, onions, tomatoes, mint leaves and the tofu. Pour the salad dressing over the salad and toss or mix to combine. Serve and enjoy!© Asmie's kitchen

Chicken Soup

 Ingredients:

Chicken parts (washed)

5 plump medium diced tomatoes

4 red or green chillies

2 green scotch bonnets 

1 large diced onion 

1 cooking spoon oil

5 chopped sprigs of fresh scent or curry leaves 

1 tsp Asmie's Kitchen Curry Powder

1 tsp Asmie's Kitchen Jollof Rice Spice

2 stock cubes

Salt to taste 

1/2 tsp Ras El Hanout spice 

1/2 tsp ground all spice 

Method

Heat the oil in a pan. Add the diced onions and fry till translucent. Add the diced tomatoes, stir and pour 2 cups water use 2.5ml measuring cup). Cover and bring to the boil. Add the chicken parts, spices, stock cubes and salt. Stir and allow to cook. Add the red or green chillies and green scotch bonnet. Cover the pot and cook for 5 minutes. Finally, add the chopped scent or curry leaves. Cook for 2-3 minutes.

Ingredients:

4 large eggs 

5 plump tomatoes (cut each into 6)

1/2 cup chopped spring onions

1 chopped onion 

2 tbsps ketchup 

1 tsp chopped garlic 

1 tsp ground black pepper

1 1/2 tsp salt 

1 stock cube

4 tbsps oil 

Method 

Break the eggs in a bowl and season with 1/2 tsp salt and ground black pepper. Whisk well. Set aside.

  Heat 2 tbsps of oil in a pan. Pour the eggs, allow to set for 10 seconds. Stir Fry to scramble, don't over fry the eggs. Pack in a bowl and set aside.

 Heat 2 tbsps oil in the same pan but clean it first before adding the oil. Add the chopped onion and garlic. Stir Fry till the onions are translucent. Add the tomatoes, chopped spring onions,1 tsp salt, 1 tsp ground black pepper and 1 tsp Asmie's Kitchen Curry Powder. Stir and allow to cook for 5 minutes. Add 2 tbsps ketchup, 1/3 cup water and 1 stock cube. Stir and cook for 3-5 minutes.

Turmeric Rice

This is a simple and delicious rice dish with a very nice aroma of some spices like all spice, fennel seeds, black pepper, etc. Cooked with few ingredients. This is an Iftar Inspiration.  Hope you will try the recipe.

 Ingredients:

2 cups rice (use 250 ml measuring cup to measure the rice)

1 cup blended red bell peppers, onion, garlic, mint & fresh curry leaves 

1 medium diced onion 

2 tbsp turmeric powder

1 tsp ground all spice 

1/2 tsp ground fennel seeds 

1 tsp Asmie's Kitchen mixed spices

1 tsp ground black pepper

1 tsp ground pepper (yaji)

1 medium cooking spoon oil

4 stock cubes

Salt to taste

Method 

Place a medium pot of water on fire. Bring to the boil, add rice (free of stones) and stir. Cover the pot halfway and parboil. Wash with water and strain in a strainer. Set aside.

  Heat some oil in a pot or rinse the pot you parboil the rice and use it. Add the blended onion, red bell peppers, half of the diced onion, garlic, mint and fresh curry leaves. Stir and cook on low flame till the onions are translucent. 

 Add the parboiled rice and stir to combine with the other ingredients. Cook on low flame for 5 minutes. Pour 2 cups of water, season with stock cubes, ground fennel seeds, ground all spice, Asmie's Kitchen Mixed Spices, ground pepper, ground black pepper and turmeric powder. Stir, add the remaining diced onions and cover the pot. Increase the flame to medium. Cook till the water in the rice is absorbed. Serve warm and enjoy! Mediterranean Egg Salad

  Ingredients:

5 eggs 

1 medium cucumber (chopped)

4 plump tomatoes (chopped)

1 medium onion (chopped)

Avocado (piya)

Olive oil 

11/2  tsp ground black pepper

1 1/2 tsp ground pepper (yaji)

1 1/2 tsp crushed chilli pepper

1 1/2 tsp salt 

Method

Wash the eggs with cool water and boil for 7-10 minutes on medium flame. Remove from the fire, strain and put the eggs inside a bowl of water for 5 minutes. Peel the eggs one after the other and cut each egg into 4 pieces. Season with 1/2 tsp ground black pepper, 1/2 tsp ground pepper, 1/2 tsp crushed chilli pepper, 1/2 tsp salt and drizzle some olive oil over it. Toss or mix with wooden spoon to combine. Arrange the boiled eggs in a plate. Set aside.

  In a medium bowl, add the chopped cucumber, onion, tomatoes and avocado 🥑 Season with 1 tsp salt, 1 tsp ground black pepper, 1 tsp crushed chilli pepper, 1 tsp ground pepper and drizzle some olive oil over it. Mix with wooden spoon or toss to combine. 

  Add tablespoons of the chopped vegetables over the seasoned boiled eggs. Serve and enjoy! ©Asmie's Kitchen

1 1/2 cups rice 

Fried small fish (feel free to use any type of fish)

3 large diced carrots  

2 cups blended red bell peppers, onion & garlic

2 cups blended chopped spring onions, green bell peppers, fresh curry leaves, fresh mint leaves & green scotch bonnet (Koren Attarugu)

chopped spring onions for garnishing 

1 chopped onion

1 tsp Asmie's Kitchen Curry Powder 

1 tsp Asmie's Kitchen mixed spices 

3 stock cubes 

Salt to taste 

1 cooking spoon oil 

Method

Parboil the rice, wash, strain and set aside.

 Heat the oil in a pot, add the cumin and fennel seeds, allow to splutter for few seconds. 

  Add the blended red bell peppers, onions and garlic with the blended chopped spring onions, green bell peppers, green scotch bonnet, fresh curry leaves and fresh mint leaves. Stir and cook till the oil appears on top of the blended vegetables. 

  Add the fried small fish, salt, stock cubes, Asmie's Kitchen Curry Powder, Asmie's Kitchen mixed spices and stir. Allow to cook for 5 to 10 minutes. Stir in the rice with 1 cup of water (250 ml measuring cup) and stir. Add the diced carrots and onions. Cover the pot and cook till the water is absorbed.

Garden Egg Sauce

4 medium garden Eggs 

Fish (deboned)

1 diced onion 

1/4 cup ground crayfish

1 medium bowl blended tomatoes, peppers, garlic, fresh curry leaves & onions 

1 tsp Asmie's Kitchen Jollof rice spice

1 tsp Asmie's Kitchen mixed spices 

3 stock cubes 

1 cooking spoon oil 

  Method

Wash the garden with clean water, cut into medium size. 

Place a medium pot of water on fire. Add the diced garden eggs.  Cover and cook till soft. Strain and pound in a mortar (turmi). Pack in a bowl and set aside.

  Heat the oil in a medium pot. Add the cumin seeds and allow to splutter for few seconds. 

Pour the blended tomatoes, red bell peppers, garlic, fresh curry leaves and onions. Stir and allow to cook till the oil appears on top of the blended tomatoes, etc. Add the crayfish, Asmie's kitchen jollof rice spice, Asmie's Kitchen mixed spices, onions and de boned fish. Stir, cover the pot and cook for 5 minutes.

Gurasa with Egg

  Ingredients:

3 large gurasa 

4 eggs 

1 tsp ground black pepper

1 tsp salt 

1 tsp ground pepper

1 chopped onion

1/4 cup chopped spring onions

1 large chopped red bell pepper 

1/2 bottle oil 

  METHOD

Place your steam pot on fire. Pour some water inside the steam pot. Cover and bring to the boil. Open the steam pot and place the gurasa. Cover and steam til soft. Remove from the steam pot and cut into desired sizes. 

 Break the eggs in a bowl, add salt, ground black pepper, ground pepper (yaji), chopped spring onion, chopped spring onions, red bell peppers and whisk. 

  Heat some oil in a pan. Coat the gurasa one after the other in the whisked eggs and fry in the hot oil till golden brown. Repeat the process till you exhaust the gurasa.

Brown Beans and Veggies Soup

 I raided my fridge and used my leftover vegetables and brown beans to make this delicious and healthy soup.  Feel free to use any beans and vegetables of your choice.

 Ingredients:

1 cup brown beans (250 ml cup)

2 cups shredded cabbage 

1 cup diced carrots

1 cup diced onions  

1 cup chopped tomatoes 

1 tsp chopped garlic

1 tsp ground black pepper 

2 stock cubes

1/4 cup oil

1 tsp salt to taste 

3 cups water 

1 tsp Asmie's Kitchen Jollof Rice Spice for reddish colour and taste

  METHOD

Remove dirts from the beans and soak overnight. Strain the water from the beans and boil with water for 20 minutes. You can add a small potash if you want to hasten the beans to cook on time. Remove the pot from the fire. Wash the beans three times with water and strain. Because sometimes the beans are bitter. Washing it reduces the bitterness.

  Rinse the pot with some water, place it back on the fire. Add the beans and some water to cover the beans. Cook till the beans is almost cooked. Don't over cooked the beans.

Remove from the fire again. Wash three times with water and set aside. 

  Rinse the pot and place it back on fire. Heat the oil in the pot, add the carrots, leeks or the hard part of spring onions and onions. Fry till halfway cooked. Add the chopped spring onions, garlic, tomatoes, cabbage, stock cubes, salt and Asmie's Kitchen Jollof rice spice, ground black pepper and the water. Cover the pot and bring to the boil. Then add the beans, stir and cook till the beans is completely cooked. Serve watery and enjoy! ©Asmie's Kitchen

Chicken Pepper Soup

As we all know that Chicken Pepper Soup is an appetizer and is also best for treating catarrh. Chicken cooked till tender in chicken stock. With spices that add aroma to cooking. Asmie's Kitchen Jollof rice is used to add reddish colour and taste to the pepper soup. Asmie's Kitchen Mixed Spices, ground pepper and ginger are also used to add more taste and aroma to my cooking. My spices are one of my secrets of cooking.

Wash the chicken and put inside a pot. Add the ground red bell peppers, onion, garlic, fresh curry leaves, spices, stock cubes and salt. Pour 1 medium bowl of water to cover the chicken. Cover the pot and cook till almost tender. Add washed and chopped scent leaves. Cook for 5 more minutes on medium to low flame. Serve watery and enjoy!©Asmie's Kitchen

Sweet Potato Salad

This is a simple yet delicious and healthy salad. You can hardly taste the sweetness of the potatoes. Made with few ingredients but taste so delicious. This is one of my favorite salads.

Ingredients:

5 medium sweet potatoes (peeled & cut into cubes)

3 plump tomatoes (cut into cubes)

1 onion (cut into cubes)

1/2 cup chopped spring onions 

2 large boiled eggs (cut into cubes)

2 tbsps mayonnaise

1 tsp salt 

1 tsp ground black pepper

  Method

Boil the potatoes with a tsp of salt in water. Don't over cook it. When you prick one of the potatoes with a fork or tooth pick and it comes out clean then it's cooked. Strain and set aside.

  Add the mayonnaise, salt and ground black pepper in a small bowl. Whisk well with a fork. Set aside.

   In a medium bowl, add the potatoes, chopped spring onions, onions, tomatoes and boiled eggs. Add the mayonnaise mixture over the potatoes and mix well with two wooden spoons.

3 medium sweet potatoes (peeled & cut into cubes)

1 cup grated red bell peppers & onion

1 tsp salt

1 tsp Asmie's Kitchen Mixed spices

1 tsp Asmie's Kitchen Jollof Rice spice for reddish colour 

1 tsp Asmie's Kitchen Malaysian Curry powder

1 tsp paprika 

1 stock cube (crushed)

1/4 cup oil

  Method

Brush a baking tray with some oil and set aside. 

  In a medium bowl, add all the spices, salt and stock cube with the oil. Whisk well. Add the potatoes and mix to combine. Add to the baking tray and bake in preheated oven for 25-30 minutes. Serve a lone or with salad and enjoy!©Asmie's Kitchen

Brown Beans Soup

 This is a delicious and healthy soup, especially for this cold weather when served warm. It's a vegan recipe. Very easy to prepare. Feel free to substitute the tofu with minced meat or sausage. And ugu leaves with spinach.

 Ingredients: 

1 cup brown beans ( soaked overnight)

4 peeled diced carrots 

Raw tofu (Danyen Awara) You can use mince meat or sausage

1/2 cup diced spring onions

1/2 cup chopped ugu leaves (you can use spinach)

1/2 cup diced tomatoes

4 cups water 

1 large chopped onion 

1 tsp chopped garlic 

3 stock cubes 

1 tsp Italian seasoning

1 tsp Asmie's Kitchen Curry powder 

Salt to taste 

1/4 cup oil


  Method 

Wash the brown beans repeatedly with water. Strain and set aside.

  Heat the oil in a medium pot, add the crushed tofu and fry till lightly brown. Add  chopped onion and garlic. Fry till the onions are translucent. Add the carrots, onions and spring onions. Stir fry till the vegetables are halfway cooked. Pour the water, boiled beans, tomatoes, stock cubes, Italian seasoning, Asmie's Kitchen Curry powder and some salt. Cover the pot and cook till the beans are soft. Lastly, add the chopped ugu leaves. Cook for 5 minutes. Serve watery and enjoy! ©Asmie's Kitchen

Tofu (Awara) Pancakes

Ingredients:

20 pieces raw tofu

1/2 flour flour or wheat flour

1/2 tsp salt

2 chopped red bell peppers (tattasai)

Feel free to add vegetables of your choice i.e grated carrots, sweet corn, grated zucchini,etc.  

1 cup water (use 250ml cup)

1/2 cup oil. You can add more if necessary 

Method

In a blender, add the flour, tofu and 1 cup water. Blend till smooth. Pour into a bowl, add the salt and chopped red bell peppers, mix to combine. If the batter is still thick, add 1/8 cup of water, that's 31ml cup. Note: the consistency of the batter should be slightly thick. Not watery. 

 Place a pan on fire. Brush the pan with oil. When the pan is hot, add a scoop of the batter, place the back of the scoop to flatten it. Drizzle some oil on top of the pancake and also round the pancake, to avoid sticking especially when flipping over. Allow to fry for 3 to 5 minutes. Flip over and fry the other side for few minutes. Remove from the pan gently and repeat the process with the remaining batter.

  Tofu Balls

Ingredients

Raw tofu (buy 300 naira tofu from sellers)

1/2 cup sifted flour 

2 peeled & grated carrots

1/2 cup chopped spring onions

1 large chopped red bell pepper/chilli pepper

1/2 tsp salt

1/2 tsp ground black pepper

1 stock cube (optional)

1/2 bottle oil for frying

  Method

In a medium mixing bowl, add the tofu and mash with a fork or mash. Add the chopped spring onions, grated carrots, red bell pepper, sifted flour, ground black pepper, salt and stock cube. Mix with hand. Mould or shape into medium balls. Arrange in a tray. 

  Heat the oil in a pan. Add the tofu balls one after the other into the pan. Fry on medium flame till golden brown and crispy. Flip over the other side and fry the other side till golden brown and crispy too. Repeat the process till you exhaust the raw tofu balls.
 
 SAUCE 

Method
Heat some 1 cooking spoon oil in medium pan. Add 1 medium bowl blended tomatoes, red bell peppers, onions, ginger and garlic paste, spices, some salt and stock cubes. Stir and cook till the liquid is almost absorbed. Make sure the tomatoes, onions and red bell peppers are cooked. Add the tofu balls and stir. Careful not to break the balls. Cook on low flame for 5 minutes. 
  Serve with white rice, cous cous, spaghetti, macaroni, etc and enjoy!©Asmie's Kitchen
